Monkey Approved

Yesterday I told you how much Mr. Everyday loves raw oysters. It is truly one of the things he looks forward to most about our annual beach vacation. Yes, he can get them in Indiana too, but it's just not the same. This year he was lucky enough to get 2 dozen fresh ones from a local market and was so happy shucking away! While I can't say I share his love for them raw (I'm sorry, but they feel like snot going down), I do enjoy them fried. Plus, we do NOT let Alex eat raw seafood of any kind. Even when we enjoy sushi as a family, and some of ours is raw, the little man is only allowed to eat cooked. At 7 I'm just not willing to take a chance with his stomach. We are very careful about what we eat raw, and have never had a problem, but it's just not something I need to let my child experience quite yet. But of course, watching Daddy shuck all those oysters and hearing him say "Mmmmmm", he was intrigued. So I decided I would fry some so that I could enjoy them, and they would be okay for Monkey to eat too. Well, they were a huge hit with all 3 of us, and Adam loved the homemade cocktail sauce too! They were gone in no time and we immediately decided another trip to the seafood market for more was in our very near future!

Fried Oysters with Homemade Cocktail Sauce
1 dozen fresh oysters, shucked, rinsed and drained
1 c. seafood breading mix (we like Zatarain's)
2 tsp plus 2 TBS Old Bay Seasoning
Oil for frying
Salt to taste
2 c. ketchup
3 TBS prepared horseradish
2 tsp. lemon juice

In a small bowl combine ketchup, horseradish and lemon juice. Chill until ready to serve. In a medium bowl, mix oysters and 2 tsp Old Bay Seasoning. Let stand for 15 minutes. In another bowl combine breading mix and 2 TBS Old Bay. Mix well. Dredge oysters individually in breading and shake off excess. Set aside. In a medium size pan, heat oil to medium. Fry oysters for 3-4 minutes per side until golden brown. Drain on paper towels and season with salt. Serve with cocktail sauce and extra lemon juice if desired.
