Weekend Company {Guest Blogger Kathy}

Good Morning. I hope your Easter weekend is off to a good start. Not only is this a holiday weekend for us, but it's also the beginning of our Spring Break, so needless to say I have a very happy Monkey on my hands. (And I can't lie, Mommy is just as excited!) We don't have anything major planned, but it's just the extra time I get with him that I'm so thankful for.

I want to thank my wonderful foodie friend, Kathy for joining me in the kitchen once again. She's sharing a fantastic recipe that would be a great use for all that leftover ham so many of us will have after tomorrow. So grab a cup of coffee and see what she has cookin'!

Easter is this weekend (but you knew that right? ha ha) and I am really looking forward to it. I've been decorating the house like crazy with crafts and we've made birds nest cookies and I can't wait to dye eggs with my kiddos today. My toddler is old enough to understand about the eggs, hunt them, and understand Easter's special meaning for the first time which makes it all the more precious to me. And my little girl just started walking in short bursts so I'm excited to see her drag her basket around. And if you're like us, you might be having ham for lunch or brunch. We are a family of 4 (well, 3 eaters if you put the 2 kids together) so if we do a nice ham for a holiday we always have leftovers even if we have family stop by which we probably will. I get a little bored of plain old ham sandwiches so I came up with a twist on a southern favorite: Hoppin John. Hoppin John is usually done at New Years and with sausage with the blackeyed peas but I tried it out with ham instead and it was delicious. I also spiced it up a bit with the Southwest corn and Jalapeno Peas. It's packed with flavor and a great way to think outside of the box and use up some of that left over Easter ham. Also, it's super quick to prepare which is a bonus for a busy family! Happy Easter from my family to yours and I'd love if you stopped by Sparkles And A Stove sometime to say hi!


Spicy Hoppin John w Left Over Easter Ham


Ingredients
  • 2 tablespoons butter
  • 1 small onion chopped
  • 1½ cup ham diced
  • 2 cups of Uncle Ben’s instant rice
  • 1 can Jalapeno Black Eyed Peas (drained)
  • 1 can Green Giant Southwest Corn (drained)
  • ½ teaspoon Chalula Sauce
  • ½ teaspoon Garlic Salt
  • ½ teaspoon Southwest Seasoning
Instructions
  1. Saute' butter and onion in large skillet
  2. Add ham, rice, blackeyed peas, corn and seasoning to skillet.
  3. Mix thoroughly and cook on low for 15 minutes.

Any Day Brunch Part 2 {Eggland's Best Eggs}

Happy Good Friday! I hope however you plan to spend this Easter weekend, it includes people you love and delicious food you love to eat! If you are hosting a brunch this Sunday, then you've come to the right place for a simple idea that your guests will love.

Today is Part Two of the "every day" brunch I recently made for my family, thanks to Eggland's Best Eggs. Wednesday I shared the first recipe with you, a new muffin my boys absolutely flipped for, Blueberry Surprise Muffins.

And today I've got an easy, yet elegant quiche that would be perfect for Easter Sunday. So many of us include ham in our Easter meals, so why not include it this way, for brunch? But honestly, this quiche would be a great meal idea, any time of day.

As I told you Wednesday, I don't think you have to wait for a special occasion to make a yummy, satisfying and fun brunch for your family, but since I know so many of you will be doing exactly that this Sunday, this comes at a perfect time. But if brunch isn't included in your holiday plans, be sure to keep this in mind for any "normal" day too!

Brunch, rather it be for a big crowd on a holiday, or for your family as an extra special treat any weekend of the year, is always a pleasing and satisfying meal, especially when it includes dishes made with Eggland's Best Eggs.

Ham and Swiss Quiche From Eggland's Best
1 frozen 9" pie crust, unbaked (I used a deep dish)
1-1 1/2 c. Swiss cheese, shredded
1/2 box frozen spinach
1 c. cooked ham, diced
3/4 c. fat free half and half
3 large Eggland's Best Eggs
1/4 tsp. dry mustard

Preheat oven to 350. Defrost spinach and squeeze out all water. Layer crust with 1/2 of the Swiss cheese. Add ham and spinach. Top with remainder of cheese. In a medium bowl, whisk eggs, cream and mustard well. Pour over top. Bake 40-45 minutes until eggs are set. Allow to cool 5 minutes before serving.

Any Day Brunch {Eggland's Best Eggs}

The word brunch can conger up countless images in a person's head. Long buffets filled with all the favorites: eggs, bacon, sausage, French Toast, potatoes, etc. Holiday meals surrounded by family and friends. Lazy Sunday mornings drinking coffee and enjoying the morning paper. But for most of us, all the images are connected by one thing, happy people enjoying delicious food; and I'm here to say brunch doesn't have to be saved for a special occasion. Blueberry Surprise Muffins From Eggland's Best
For Filling:
1 Eggland's Best Egg
1/4 c. white sugar
8 oz. Neufchatel cheese (reduced fat cream cheese)
Juice of 1/2 lime

For Muffin Batter:
2 Eggland's Best eggs
1 c. low-fat buttermilk
6 TBS margarine, at room temperature
1/4 c. maple syrup
2 c. all purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. white sugar
14 oz. blueberries
1 tsp. vanilla
1 TBS Turbinado sugar (sugar in the raw)

Preheat oven to 375. Grease a muffin pan, or line with baking cups. Prepare filling by mixing cream cheese, sugar, egg, and lime juice in a medium bowl. Beat with electric mixer until well blended. Set aside. Prepare muffin mix by whisking flour, baking powder, salt and sugar in a medium bowl. Set aside. In a small bowl combine maple syrup, margarine, eggs, milk and vanilla. Beat well with electric mixer until smooth. Slowly mix the egg mixture into the flour mixture and blend well until combined. Gently fold in blueberries just until swirls appear. Fill muffin tins 1/3 with batter, top with 1 TBS filling mixture and then 1 TBS or a little more batter mix to cover filling. Sprinkle with Turbinado sugar and bake for 25-35 minutes until slightly golden.

It's Not A Rut, It's A Trend

There are so many of us who find ourselves falling into the mealtime rut. We find dishes our families enjoy and we make them again and again. They are easy because they are tried and true, and they are pleasing because we know they will be successful each and every time. But in my opinion, if you find something that tastes great, is a simple "go-to", and you can switch it up even a little each time, then it becomes a trend, not a rut!

So even though this idea came to me not too long after we enjoyed my Crock Pot Italian Sloppy Joes, I decided we didn't need to wait. Sure, they were another sloppy joe, but beyond the ground beef, there wasn't many other similarities. But to be honest, with my "boys" I knew I wouldn't have to worry about them complaining about the new trend in my kitchen. After all, they love sloppy joes and they love Mexican food, so I knew these would be a hit. 

Topped with your favorite taco toppings, these can truly be "make your own". How fun for a family dinner, or group gathering! Everyone can have one made to exactly their tastes. So, if you've found yourself in another dinner rut, change it up tonight with these; and then in a couple nights, try the Italian ones above. Then you too can say "It's not a run, it's a trend!"

Mexican Sloppy Joes
1 lb. ground beef
1 (1.1 oz) packet taco seasoning, or 7 tsp. homemade
1 (4 oz) can diced green chilies
2/3 c. water
Salt and Pepper to taste
Shredded Cheddar
Chopped Tomatoes
Shredded Lettuce
Buns

In a large skillet, brown beef until no longer pink. Drain if necessary. Add taco seasoning and water. Bring to a boil. Reduce heat and simmer until slightly thickened. Add green chilies and mix well. Reduce heat to low and allow to cook 5 minutes until flavors develop. Using a slotted spoon, add meat to bun bottoms. Top with cheese, allowing it to melt for a few seconds. Top with lettuce and then tomato (I find this order is best to keep everything together.) or other favorite taco toppings.

Weekend Company {Guest Blogger Bekki}

Welcome to the weekend. In fact, welcome to the "even though it doesn't feel like it" first weekend of Spring! If it does feel warmer and brighter at your house, I'm jealous! We have no end to winter in sight...but we're still hoping!

Today's guest needs no introduction, she's been with us so many times. So, grab a cup of coffee and once again join Bekki in the EMM kitchen~


I just celebrated 3 years married to my amazing husband Josh. We share a home in California with our fur babies, Minnie and Shadow.  After years of learning recipes and tricks from my mom, grandmothers and aunts I moved on to learn and teach cake decorating.  Enjoying every minute! All while learning tricks and tips of my own to improve on, and make healthier versions of my favorites. To later compile and write my own cookbook to share with all that love food as much as I do. I hope that these recipes bring you joy and sweet memories as they always have for my family and I.
Happy Spring EMM fans! Most of us are ready for the sun to stay out, and to enjoy more time outdoors. I am definitely one of those people!
With St. Patrick’s Day just passing I still have the smell of cabbage lingering in my mind. It’s a vegetable that gets the back seat for most dishes.  We really enjoy it here in our house and it takes center stage in many of our meals. Today I thought we could take it one step further and use Brussels sprouts, a close cousin but very delicious none the less. I’ve dressed this one up some for you though. A side dish with some extras.

Brussels sprouts with Spicy Sausage
 2 tbs. Unsalted butter
1 tbs. olive oil
1 medium onion, chopped
sweet red peppers, sliced
1 pound Brussels sprouts, quartered
3 large pre-cooked hot sausage links, sliced
Salt to taste
Granulated garlic to taste
In a large skillet, add oil and butter and heat until oil is glistening.  Add onions, peppers, and Brussels sprouts. Sprinkle with salt and garlic. Cook until onions have softened. Add sausage and cook until sprouts are tender, and sausage is warmed through. Taste for seasoning and add additional salt and garlic if desired. Serve hot with your favorite main course or as a stand alone meal.

Even More Extra Calcium

Back in January when I shared my Strawberry Yogurt Bites, they were a huge hit! One, because they are super simple. Two, because they taste insanely good and are highly addictive. And three, because so many moms out there discovered, like me, they were a fantastic way to get extra calcium into our kids!

And today I've got yet another way to sneak that calcium in and your kids will have absolutely no idea. Not to mention, if you thought the ones made with jello were easy...you "ain't" seen nothing yet!

The idea for these came to me via my Church Supper blog hop I host each weekend, where a couple weeks ago my great foodie friend Sheryl aka Lady Behind The Curtain shared her version and I instantly knew it was something Alex would love, and I would love to share with all of you. I know many of you never get the chance to drop by on Sundays, so these could be missed by many EMM fans, and it was too good of an idea not to make sure it reached as many people as possible.

A great after school snack, or simple dessert, these are fun to make and fun to eat. In fact, they are so simple, they are a great way to get the kids into the kitchen! With a little supervision, they could basically do the entire process themselves, which only leads to them wanting to eat them even more. Kids loving taste testing, but they love it more when they've gotten their hands dirty creating something. Plus, depending on the flavors you choose, the pretty pastel colors are perfect for Easter too.

I know many parents out there are struggling to get proper nutrients into their kids, and if you have resorted to covert operations, I say bravo! You gotta do what you gotta do. But with these, the guilt literally just melts away!

Frozen Greek Yogurt Bites Inspired by Lady Behind The Curtain
Assorted Flavors of Nonfat Greek Yogurt
Blueberry
Lemon
Black Cherry

Place yogurts in 3 separate plastic bags. (I added a few drops of yellow food coloring to the lemon to get a richer yellow color.) Snip corner of each bag off. Line a baking sheet with parchment paper. Squeeze out small buttons of yogurt. Place in freezer until solid. Remove from parchment and keep in airtight container in freezer.

More of Indiana's Finest

As the saying goes, "There's more than corn in Indiana"...and that's true...but there is also corn, a lot of corn. For those of you who have never visited our Hoosier state, we love our corn, and we know our corn! Did you know Orville Redenbacher was born in Brazil, Indiana? Where to this day, they still hold a Popcorn Festival! And that is just one of the many corn celebrations we have across this state each year. 

Field after field corn grows from one end of Indiana to the other, and for most of us, it's one of our favorite things to eat too! There is nothing better than fresh picked sweet corn, with some butter and salt. Mmmm....my mouth is watering just thinking about it. Truly one of the things I look forward to summer the most is stopping at a roadside stand where the corn is about as fresh as you can get it. But during the winter months, I find myself looking for recipes that use canned or frozen corn so I'm able to get our corn fix. And when you take that and combine it with another favorite, my Crock Pot, it's like a 2 for 1 special! 

This soup is so simple, and oh so comforting on a cold day. Yes, I realize today is the official First Day of Spring, but let's face it, there are still some chilly days ahead of us, especially for those of you living in areas even colder than Indiana! Creamy and flavorful, your family will enjoy this oh so much. 

So, while there is more than corn in Indiana, I'm incredibly happy there is plenty of it too! 


Corn and Cheese Chowder From Fix It and Forget It
1/2 c. chopped onions
1 1/2 c. chopped celery
1 1/2 c. chopped carrots
3/4 c. water
1 (15 oz.) can corn, drained
1 (15 oz.) can creamed corn
1 1/2 c. shredded cheddar cheese, plus extra for garnish
3 c. milk
Salt and Pepper to taste

Place onions, carrots, celery, water, salt and pepper in Crock Pot. Cook on HIGH for 4-6 hours. Add both cans of corn, milk and cheese. Cook on HIGH 1 additional hour. Turn down to LOW until ready to serve. Garnish with extra cheese if desired.

Party Or Dinner

Lately I've been finding myself stumbling up on more and more recipes that would be perfect for a party, made for a party in fact...but there's one problem. I don't have a party on our calendar in sight. I know many of you entertain or get entertained on a weekly basis, but that just doesn't happen around here. Special occasions, holidays, birthdays...that's when they party platters come out in my house, but I refuse to wait for some of these yummy things I'm finding, so I simply take the recipe, make more of it, add somethings on the side...and we've got ourselves a new meal idea. And today's recipe is the perfect example of that.

Now, if you are need of a party idea, I'm telling you, your guests will flip for these! A taco they can eat with one hand, and probably in one bite!! All the flavors they love of a taco bar, but in an easy to handle tiny package. Not to mention, they are as cute as all get out. When I first saw this idea on Pinterest, it was actually before the holiday party season in our house, and yep, I forgot about them. It wasn't until a few weeks ago when I was going through some of my "pins" looking for inspiration I happened to find them once again and then kick myself for not including them in any one of many get togethers I could have. But oh well...these things happen, and I still got a new, fun weeknight dinner out of it...one that I know your kids will love as much as mine did! 

So if it's a quick Tuesday night supper or a last minute party treat you're looking for, search no further. EMM has you covered! 

Mini Taco Bites
1 bag Scoops tortilla chips
1 lb. ground beef
3/4 c. water
1 (4.5 oz) can chopped black olives
1 (1.1 oz) packet taco seasoning
1 (15 oz.) can petite diced tomatoes, drained
1 c. shredded cheddar cheese
Sour cream, optional

In a large skillet brown beef. Drain if necessary. Add taco seasoning and water. Bring to a boil. Reduce heat and cook about 5 minutes until slightly thickened. Add olives and tomatoes. Stir until well combined. Add cheese and stir until melted. Allow to cook 5-7 minutes until mixture is thick and flavors develop. Carefully fill chips with beef mixture and top with sour cream.
*NOTE* This made enough for about 30 for us, 10 each, for a meal. Plus I had some extra filling leftover.

Weekend Company {Guest Blogger Angie}

Good Morning and welcome to another weekend! I would like to give an extra big thank you to today's guest. See, usually at the beginning of the week I send an email to my guest blogger reminding them it's their turn. Well, apparently my brain fell out this week because by Wednesday she was emailing me asking "Am I still on the calendar?" Thank goodness for sweet people who are willing to remind me and get me back on track! So please welcome Angie back into the EMM kitchen~


Good Morning EMM!  This is Angie Cupp returning from Northern Indiana!  I am so happy to be back with you this Saturday morning!  A simple, but oh so good recipe is sometimes hard to find.  As a wife & mother of 3, sometimes it is hard to please everyone's taste buds. I love to surf the Internet for new finds that I think my family will enjoy.  With baseball season approaching quickly, we will be needing those quick go to recipes for many evening meals and this one scored a home run.  It is simple and delicious.

I love searching Pinterest for new ideas.  I love reading blogs, as long as they have to do with making a good meal or baking up a tasty treat!  Comfy in the Kitchen blog shared a recipe that has found its way to Pinterest and after my daughter saw the picture of it, it was a must try.
Chicken Crescent Bake is what my kids have named this recipe as I like to add bits of our home likings to each recipe that I find. 

Chicken Crescent Bake
1 Tube of Crescent Rolls
2 Small Boneless Chicken Breasts (boiled and shredded)
1 1/2 Cups of Shredded Sharp Cheddar Cheese
1 Can of Cream of Chicken Soup
1 Soup Can of Milk
Preheat your oven to 350 degrees. Boil your boneless chicken breast in water and a shake of garlic salt.  Once boiled and cooled shred chicken with fork.  Grab a 9x13 glass baking dish, spray with non-stick cooking spray.  Lay out each of your crescent rolls and fill each of them with 1-2 TBS of shredded chicken and shredded sharp cheddar cheese.  Roll up your crescents rolls and tuck so that the filling doesn't leak out.  8 of these fit nicely in my 9 x 13 dish. Mix together 1 can of cream of chicken soup and a can full of milk. I use my Tupperware shaker. Pour soup/milk mixture over your crescent rolls. Take remaining 1/2 cup of cheese and sprinkle over the top.  Bake @ 350 for 30 minutes until bubbly.   Cool for 5 minutes and serve.  Serve this up with a side of green beans or corn and you have a yummy & savory meal!

Everyday Road Trips

Just In Time

A couple weeks ago when I announced that I would only be posting 3 days a week, I could have never imagined the level of support and understanding I would get from my EMM family; and for that I thank all of you. You embraced this new chapter of the blog, and respected the fact I needed to cut back a bit for the good of my family. After the wonderful response and feed back I received, I thought the hard part of this change was over. But I didn't think about one thing: Making sure specific recipes are posted before certain days on the calendar. Hence why I'm literally sneaking this one in before St. Patty's Day weekend.

As I was scheduling things this was going to go live on March 22nd...sure these would taste just as great on March 23rd, but I meant for them to be an idea for everyone's favorite green holiday! A yummy chocolate treat with a nod to St. Patrick's Day lovers everywhere!

To be honest, if you are a chocolate and mint fiend like I am...you won't care what day of the year you're eating these, as long as someone doesn't try to take them away. They are super easy, and packed full of minty flavor. They are like combining one of everyone's favorite after dinner mints with chewy brownies, a match made in heaven.

If by chance you aren't reading this until after Sunday, then sure, wait another year before making them...but I don't suggest that. In fact, if I were you I would buy the ingredients today!

Creme De Menthe Brownies From Andes
1 (18.3 oz.) family size boxed brownie mix
2 eggs
1/4 c. water
2/3 c. vegetable oil
*This is what my mix called for. Check your box*
1 (10 oz.) package Creme De Menthe Chips (found in baking aisle)

Preheat oven to 350. Grease bottom of 9x13 pan. Prepare brownie mix according to package directions. Bake for 24-26 minutes until toothpick comes out clean. Pour chips over hot brownies. Let sit 2-3 minutes. Using a spatula or knife, spread around until evenly topped. Allow to cool 10 minutes and then chill to set. Keep refrigerated.

I'm A Sloppy Girl

Okay, here is my confession. I love Sloppy Joes...every kind...all kinds...any day of the week and twice on Sunday. Okay, so maybe that last one is a bit of a stretch, but seriously, they are absolutely 100% one of my go-to meals. I think it's because they were one of mom's also. They remind me of my child hood. They are fun to eat, easy to make, and super satisfying. I've done them all kinds of ways, each one just a little different, but I'm always on the lookout for new ones to try. So when I came across this one day while strolling through the blogisphere...I knew it would be showing up on our dinner table very soon.

I already do an Italian spin on the "Joe" with my Pizza Joes, hands down one of Alex's favorites of all time. So when I first read that word-Italian- I almost dismissed it. Only because it was kind of a "been there, done that" mindset. But oh how happy am I that I kept reading! First off, my original version is done stove top, and that's perfectly fine. But these...these included 2 of my favorite words...Crock Pot. Oh, how my heart skips a beat reading those. Easy, cooked all day, deep flavored things come out of the slow cooker, and I'm always game! Not to mention, these used sausage instead of ground beef, and that was going to be a nice change. Something just a little different!

I guarantee your kids will love these. I mean...pizza on a bun...with melted cheese...what kid is going to turn that down? Heck, what adult is going to? And if you are a "pot-lucker" these would be a huge hit with any crowd! What can I say? I'm a sloppy kind of girl, and if you are to flip over this new version.

Crock Pot Italian Sloppy Joes From Skinny Taste
1 lb. ground Italian sausage
1/2 c. chopped onion
3 garlic cloves, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 1/3 c. canned crushed tomatoes
1/2 tsp. Italian seasoning
Salt and Pepper to taste
Buns
Sliced Provolone Cheese

In a large skillet over medium heat, brown sausage, onions and garlic until no longer pink. Drain if necessary. Transfer to Crock Pot. Add peppers, tomatoes and seasonings. Cook on LOW for 4 hours. To serve, scoop onto bottom buns and add sliced cheese, allowing to sit for a few minutes to melt.
