Welcome Holiday Season

 If it was up to me, the Christmas tree would go up the minute the clock struck midnight on November 1st, but alas, I have a husband who believes it should stay in the shed until after Thanksgiving. But guess what, the turkey leftovers are in the fridge, all of the fall decor is packed away and I am currently typing in the glow of a beautifully lit balsam fir. 

December arrives this week, and before we have a chance to blink Christmas day will be upon us. We need to make sure to enjoy the next 28 days as much as possible. Sure, the hustle and bustle might stress us out a little, and if you're anything like me your to-do list is a mile long; but finding ways to find the magic and joy in the season are a must. 

After spending 12+ hours putting up the indoor decor on Friday, I was completely exhausted and ready to collapse into my recliner. However, the 6 year old had other plans. "Mommy, I want to put on Christmas jammies, watch Frosty and drink peppermint hot chocolate." 

That declaration resulted in him, daddy and mommy all laying on the floor snuggling, watching the movie while he sipped his holiday drink. (The teenager was at work, or there would have been 4 of us sharing that blanket.) As tired as I was, I wanted to soak in every second of this impromptu memory making moment. 

Plus, it reminded me that it was finally time to share a holiday inspired recipe with all of you. Whipped Hot Chocolate takes your hot cocoa game to the next level. It's super easy and the perfect treat to enjoy after building a snowman or while you watch Rudolph or White Christmas. 

The next 4 weeks are going to fly by, but my wish for you are those tiny moments that come out of  nowhere and fill your heart with the Christmas spirit and love. 

 

Whipped Hot Chocolate

1/4 cup milk chocolate hot chocolate powder mix 

2-3 cups chocolate milk, warmed

1/2 cup heavy cream

1/4 cup powdered sugar, sifted

Mini Marshmallows

Chocolate Sprinkles

In a large metal bowl that has been chilled, whisk together hot chocolate mix and powdered sugar. Add heavy cream and whisk just until combined. Using an electric mixer, beat until soft peaks form. Transfer mixture to piping bag. Divide chocolate milk between 2 mugs. Pipe whipped mixture onto each. Garnish with marshmallows and sprinkles.

Welcome October

Apparently we blinked and September came and went. What a whirlwind! To welcome in a new month, the first "true" one of autumn, I thought a tasty warm beverage was the perfect way to usher it in.

We are big slow cooker drink lovers. From apple inspired ones in the fall to festive wassail at the holidays and warm hot cocoa on a cold winter's day, they are something I make a lot on the weekends when we are at home hanging out.

Seriously, what tastes better on a chilly day than a big mug of something warm and delicious to soothe your soul? Not to mention most of the time, whatever you've got warming in that slow cooker makes the house smell AH mazing!

Got a long day of raking ahead of you? Come inside to this. Visiting the local pumpkin patch or corn maze? Have this waiting on you when you get home. Having some people over for a big bonfire? This will stay warm all night long!

It would taste just as delicious with apple cider, maybe even more so, but I had juice on hand. (Not to mention, sometimes apple cider is just too darn expensive! Seriously! It can be a tad ridiculous!)

This is one of those drinks that will take you through October, would be great on Halloween night, and terrific for those turkey day guests coming quicker than you think!

We still might have some warm sunny days left, but they are definitely getting fewer and farther between, so when the rain drops are puddling, the leaves are falling and that crisp autumn wind is blowing, a mug of this is certain to warm you from the inside! 

Warm Autumn Apple Punch
4 c. apple juice
1 can frozen orange juice, thawed
2 cinnamon sticks
3/4 tsp. ground ginger
3/4 tsp. ground allspice
1/4 tsp. ground cloves

Combine all ingredients in slow cooker. Stir well to combine, whisk if needed. Cook on LOW 4 hours. Keep on warm and serve all day!

Soul Food Saturday

With Holiday time comes all things pumpkin. Including coffee! How many times have you craved a big as they come, full cup of this favorite coffee house specialty and not been able to get away for one? For me it's more often than I'd like to think about. It seems I can never have enough. And truthfully the grocery store creamers are good but they don't quite hit the spot for me. So here I have a treat as well as a gift. A new version of this delight, made right in your kitchen.


Pumpkin Spice Coffee Creamer
2 c. Sugar
2 c. Water
1/4 c. Pumpkin puree
2 cinnamon sticks
2 tsp. pumpkin pie spice

In a medium sauce pan add all ingredients and stir to combine. Cook for approx 10  minutes, stirring frequently. Strain mixture through fine mesh strainer, twice. Chill
Mix 1 to 2 tbs. of syrup with coffee and warm milk to taste.
Finish with whipped cream and pumpkin spice if desired. Enjoy

Fall is Coming

Any one that knows me well, or is a faithful reader of this blog knows I love summer...and when it comes to an end I tend to get a little grumpy. I don't mind fall, in fact, I enjoy it. Sunny days at the pumpkin patch, apple orchard or one of our favorite autumn festivals. Donning a hoodie because there is a chill in the air. Decorating for Halloween. Enjoying a family meal with all the trimmings at Thanksgiving. 

But this is where the train comes off the track. See, while I don't mind fall, I detest what comes next. I hate snow. I hate the cold. The only bright spot for me in winter is Christmas. As far as I'm concerned, we can go from summer, to fall, back to summer, take a two-day break at Christmas for some festive flakes, and then go right back into summer again. Yeah, I know....I live in the Midwest...it's a pipe dream. But there are things to look forward to with fall on it's way, so I try to make the best of it, and find solace in those. 

One thing I love to do during the chilly fall days is make a big pot of a warm drink to enjoy all day long while we are watching football, coming and going, or in this case, feeling a little under the weather. That's right, before summer was over, little man and I both got sick. Between his strep throat and my sinus infection, we made a good pair. But the one thing we could both enjoy was this delicious, warm, comforting drink that not only tasted great, but really soothed our oh so sore throats. 

If you love apple cider, this takes it to the next level. It combines fantastic autumn flavors with the brightness of citrus. It's perfect for your fall cook-out or bonfire too because you can heat it up, and then leave it warm in the slow cooker all day and night long. Oh, and if there is some left, you can keep it in the fridge for up to three days, so it doesn't go to waste. 

Autumn is on it's way. I can't hide from it. But I can enjoy these last warm days, and look forward to the things I do love about the next season. And as far as what is coming after it, denial is a beautiful thing.

Hot Citrus Cider
1/2 gal. apple juice
2 1/4 c. water
1 1/2 c. orange juice
3 4-inch cinnamon sticks
1 TBS whole cloves
1/4 c. molasses
Garnish: apple slices

Mix together all ingredients except garnish in a large saucepan over medium heat. Simmer for 10 minutes, stirring occasionally, until heated through. Transfer to a slow cooker; keep warm on low setting. Serve in mugs, garnished with an apple slice. May be refrigerated in a covered container up to 3 days. Makes about 3 quarts. *NOTE* I did not have cinnamon sticks on hand, so I used 1 1/2 tsp. ground cinnamon.

Soul Food Saturday #22

It's a special weekend at our house. Monkey will be turning 9 on Monday, and we are celebrating all weekend long! So of course Bekki couldn't have Soul Food Saturday without a little party for her favorite little guy!


Right here on Soul Food Saturday we are celebrating our favorite Monkey’s birthday! Yep, its here again! Can you believe it? It feels like we just celebrated him turning 8. Where has the time gone? It seems like just as fast as these pizzas bake, our Monkey is growing up before our eyes. I want to thank his sweet Mama for sharing him with us all, and giving me this opportunity to celebrate and create this party food for him.

Big love to you from California Alex! May God continue to bless you in every area of your life, keep your heart full of His everlasting love, and show you every moment that you are his beautiful child.
1 can Pillsbury pizza dough
Jar of pizza sauce of your choice
1 c. pizza cheese blend
1 c. Mexican cheese blend
1 package mini pepperoni
1 c. thickly sliced pepperoni
1 c. precooked sausage crumbles
1 jalapeno, chopped
4 sweet mini peppers, sliced
½ c. red onion, sliced
1 tbs. olive oil

Preheat oven to 425°F. Spray cookie sheet with cooking spray; sprinkle with cornmeal. Set aside. Cut roll of dough into 2 equal pieces; shape each piece into a ball. Roll out ball of dough into a 10-inch round. Place the rounds on the prepared cookie sheet; brush each with oil. Bake 6 to 8 minutes.

The Perfect Monkey Combo
Spread round with 4 tablespoons pizza sauce. In a small bowl mix cheese together; sprinkle ½ c. over pizza sauce. Top with 2/3 of pepperoni, half of crumbled sausage, ½ of sweet peppers, ½ of jalapeno and ½ of onions. Then top with ½ c. of blended cheeses. Bake 10 to 13 minutes longer or until crust is golden brown and cheese is melted and bubbly.




Meat Loving Monkey Super Supreme
Spread round with 4 tablespoons pizza sauce. Sprinkle ½ c. cheese over pizza sauce. Top with remaining pepperoni. Add thick sliced pepperoni, remaining half of crumbled sausage, sweet peppers, jalapeno and onions. Finally top with ½ c. cheese. Spread round with 2 tablespoons pizza sauce. Mix 1/2 cup Pizza blend cheese and 1/2 cup Mexican blend cheese; sprinkle half over pizza sauce.


Turbo Booster Punch
You can’t have a party without a great drink, so for this party I chose punch! Because Monkey loves it and so do I.
1 64 oz. can of pineapple juice
1 full cap of presweetened cherry Kool aid
64 oz. water
1 2 liter of 7up
Maraschino cherries
In a large pitcher or punch bowl add water, and kool aide mix. Stir to combine. Add pineapple juice and 7 up and mix to combine. Serve with ice, and garnish with maraschino cherries.

Soul Food Saturday #18

Well, that time is upon us. It is the last weekend of summer vacation for us. I am trying hard to come to terms with little man not being with me all day, every day, but honestly, I think I'm still in denial. In fact, I could use some cheering up. And Bekki is here with just the drink to do it! I love make at home versions of my favorite Starbucks drinks, and she has one for my latest obsession of theirs. 


This drink is popular in some Mexican restaurants and even some full service grocery stores here in California. They are found often at farmer's markets and street fairs as well. This is a favorite recipe I found several years ago on a PBS show called Pati's Mexican Table. I love Jamaica year round, but especially in summer. This tea reminds me of  Starbucks  Very Berry Hibiscus Refresher. The tart flavor with the slight sweetness in the background. It may just be a new family favorite of yours as well. The concentrate is made just as you would brew any tea, then to make the water, you add additional water like you would traditional iced tea. Grab a big glass your going to love this one!

Hibiscus Tea/Jamaica Water  Pati's Version
2 c. Jamaica concentrate (see below)
3 c. water
When ready to serve, Add 2 cups concentrate with 3 cups water, or to your liking, and some ice cubes.

Jamaica Concentrate
8 c. water
2c. dried hibiscus or jamaica flowers (found in the Mexican spice section of the grocery store)
2c. sugar, or to taste

In a saucepan, pour 8 cups of water and place over high heat. Once it comes to a boil, add the jamaica flowers, simmer at medium heat for 10 to 12 minutes and turn off the heat. Allow to cool slightly and strain into a heat proof glass or plastic water jar. Add the sugar and mix well, cover and refrigerate. It will keep in the refrigerator for at least 3 months.

Weekend Company {Guest Blogger Bekki}

Good Morning and welcome to another Saturday. I hope this finds you at the end of an amazing holiday week. Our week is ending just as special as it began. See, today two very special people are getting married. My brother in law, Matt, is marrying his soul mate, Jill. There love story is one for a fairy tale. As some of you will remember, back in May 2011 Matt was diagnosed with one of the rarest forms of leukemia. Then in August Adam was his donor for a stem cell transplant to fight that cancer. Well, about a month after that, during his recovery, he "met" a friend of a friend, Jill. But see, they couldn't really meet at all. Part of recovering from a stem cell transplant is extreme isolation, as to avoid germs. Three months of phone conversations was how they spent the beginning of their relationship. Then on December 23rd they met face to face for the very first time; and according to Matt, he knew in that instant she was "the one". They were engaged in June and now today is the big day. Matt has waited for so long to find the perfect woman to share his life with, and as we all told him many times, the best things come to those who wait. I remember sitting in a hospital room telling him that "I didn't know why he was being tested by God with his illness, but He was going to make sure wonderful things on his horizon." Little did we know, just how wonderful they would be.

Congrats to Matt and Jill~ may God bless your marriage always and love fill your life forever more.

I am married to my wonderful husband Josh, have a beautiful 12 year old step daughter Amy and 2 fur-baby sweethearts Minnie and Shadow. I am a self taught baker/cook. I taught Wilton cake decorating for a while, worked in a grocery store bakery and have even spent time baking wedding/birthday cakes as a hobby on the side. My love for cooking has been since childhood. Spending time with my mother, aunts, and grandmothers. Aiding in their recipes or just being there for the conversation. Its always been a source of calm, peace, and ultimate fulfillment. The idea that you add your love to each recipe and share it with the people you care about is such an amazing blessing to me in more ways then I can ever put on paper. I have decided writing a cookbook was something I could do to share my love of food with family, friends, and whomever else comes my way. I hope your day is blessed with all your favorite things.

Can you believe it? We are actually just days away from the New year? Nope, I can't either but its here and we have to celebrate. These recipes are dedicated to The Everyday family who was just blessed with a new member! Congratulations to the happy couple on their blessed day. With this beautiful union I had to match it with something just as decadent and beautiful! A fizzy new years eve punch great for any crowd, even the little ones. Yep, a punch with zero alcohol and my favorite, maraschino cherries. Now that we have a fizzy drink you need a oh so chocolaty dessert too right? Yes! How about a Chocolate Turtle cheesecake? That's right I said it! Now that I have your complete attention lets celebrate this amazing time of year with the ones we love. May God bless you all in the new year and give you His best. 


Chocolate Turtle Cheesecake Adapted from a family Christmas
6 tbs. margarine, melted
2 c. vanilla wafer crumbs 
1 pound caramel candies
3/4c. evaporated milk
1 1/4c. coarsely chopped pecans
2 (8oz.) packages cream cheese, softened
1/2c. sugar
2 eggs
4oz. semisweet chocolate melted 
 
 Preheat oven to 350 degrees. Combine margarine and vanilla wafer crumbs and press into the bottom of 9 inch spring form pan. Bake 5 minutes. Remove from oven and set aside. 
Place candies and milk in saucepan; melt together. Pour into crust. Sprinkle pecans over top. Set aside. Beat cream cheese and sugar. Add eggs one at a time and mix in melted chocolate. Pour over pecans and smooth out. Swirl long toothpick through cream cheese to get desired design.Bake for 40 minutes. Remove from oven and let cool on wire rack for 1 to 2 hours Chill 4 to 6 hours. Serves 12 

Garnish with raspberries, if desired.

New Year's Eve Celebration Punch Adapted from a family Christmas3c. sugar
3c apple cider or apple juice
6c. grapefruit juice
1 1/2 quarts ginger ale
10 maraschino cherries with stems

Lemonade ice cubes
1 (6 oz) frozen lemonade, thawed and prepared


 In a saucepan, mix the sugar and apple cider. Cook until the sugar is dissolved.
Cool and chill. After chilling add grapefruit juice, orange juice and ginger ale. Pour the
punch into a large deep bowl, or punch bowl.For lemonade ice cubes, pour lemonade into ice cube trays and freeze. Place cups around the punch bowl. Place cherries and ice cubes in each serving of punch. Serves 10

My Christmas Guilty Pleasure

I love so many holiday movies, I have to break my favorites into categories. My favorite traditional (well it's a tie) "It's a Wonderful Life" and "A Miracle on 34th Street". My favorite animated~ "The Polar Express" and my favorite comedy~ "National Lampoon's Christmas Vacation". And while watching the last, is my first memory of ever hearing the words egg nog. You know the scene. When Cousin Eddy and Clark are in the living room and Clark is trying to enjoy his rich and creamy holiday beverage despite Eddy's surprise visit. I remember asking my parents what egg nog was and they both answered with one word..."Yuck". Okay, so they aren't fans. Well, it was always something I wanted to try, but never had the opportunity until a few years ago when Mr. Everyday brought some home from the store and said "I know you'll like it". Oh, he knows me so well! It quickly became one of my guiltiest pleasures during the holiday season. And yes, I don't mind the store bought, nor do I require alcohol. I'm so obsessed, rum flavoring is just fine. I have to stop myself from drinking too much, because I could literally have it as my sole beverage for the month of December. So the first time I was going to try making it myself, I wanted to make sure it was simple as to not ruin my love. And I love this recipe because it's perfect for egg nog novices, not too strong to scare you away. Plus, it's non alcoholic so the little ones can enjoy it too. I know many out there feel the same way my parents did, and still do today, but for those of you who do enjoy this seasonal treat, or want to try it for the first time, this is a great place to start!

Easy Egg Nog From About.com
2 eggs, well beaten
3 TBS sugar
1 tsp. vanilla
1/8 tsp. ground nutmeg
2 1/3 c. milk
Cinnamon for garnish

Place all ingredients in a blender and blend until well combined. Serve chilled with a garnish of extra nutmeg and cinnamon, if desired.

Candy Drink

Okay, so I'll admit, I am a little early with this, but I guarantee after you read today's post, you are going to want to keep it on your "holiday must" list. I realize we are still a week away from Thanksgiving, but in my mind, that means Christmas is just around the corner, and I've already got holiday yummy treats on the brain. To be honest, I tested this recipe at the end of last month, and didn't even think about it being "holiday-ish" until I saw and tasted it. Yes, it was meant to taste like one of our favorite Christmas candy treats, but honestly, I was simply happy to have yet another warm drink to have waiting on Monkey after walking home from school on a chilly day. But as soon as I smelled it simmering on the stove, and then when it hit my taste buds, it was like someone turning on the Christmas lights and putting the star at the top of the tree. Now I know I am not the only one out there looking ahead and making lists of all the tasty morsels we want to make starting December 1st, so don't be shy! We are in good company. We are chocolate covered cherry addicts in this house and usually go through about a box a week during the holidays; but they have to be the ones with the creamy white center! And don't get me started on chocolate covered blueberries! Oh my gosh...heaven in a bite! And this definitely lived up to expectations tasting just like that favorite candy of ours. So, rather you are looking for something warm and delicious for a chilly day, or like me are already making plans for eating your way through the holidays, definitely print this off and save it for the perfect cold, or even snowy day!

Cherry Cordial Hot Cocoa 
5 1/2 c. milk
1 1/2 c. half and half
1 1/2 c. chocolate syrup
1/2 c. maraschino cherry juice, divided
1 3/4 c. heavy whipping cream
1 TBS powdered sugar
Maraschino cherries for garnish

In a large stock pot, heat milk, half and half, chocolate syrup and 7 TBS cherry juice over medium heat, stirring often. In a medium bowl, using an electric mixer, beat heavy cream until frothy. Gradually add powdered sugar and reserved cherry juice. Beat until soft peaks from. Set aside. When hot cocoa is heated, ladle into mugs and top with whipped cream and cherries.

Indian Summer Drink

When autumn rolls around most of us accept the fact chilly temperatures are here to stay. But in the back of our minds all of us know that we could also have an Indian Summer in our future with a few more days of warm, sunny weather. And when those days come, I am never one to complain. Well, that is until they leave and the rain and coolness of autumn returns. (As I've said before, I enjoy autumn...just not what comes next!) So when those warmer afternoons come, I find myself once again craving something over ice to drink to cool me down. But I still want to enjoy all the flavors of fall I look forward to each year. This drink is the perfect combination of that! Iced tea that tastes and smells like autumn! Just cooking it on the stove will make your house smell like everything you love about fall!   It is the best of both worlds. Cool enough for a warm, sunny day. "Spiced" enough to keep you in the leaves changing, hayride season, hoodie wearing kind of mood!

Spiced Iced Tea Adapted from Food.com
6 c. water
1 tsp. whole cloves
1/2 tsp. cinnamon
3 Earl Gray tea bags
1/2 c. sugar
3/4 c. apple juice
1 TBS lemon juice

Combine water, cloves and cinnamon in a medium saucepan. Stir well to dissolve cinnamon. Bring to a boil, stirring occasionally. Remove from heat. Place tea bags in water and steep for 10 minutes. In a small saucepan, combine lemon juice, apple juice and sugar. Bring to a boil, making sure sugar dissolves. Strain tea mixture into juice mixture. Stir well. Serve over ice.

Alex In The Kitchen Again

Does your family enjoy a good ole' fashion fair as much as we do? We have certain ones we look forward to each year, and they are definitely a highlight of our summer. And at the fair, do you have your favorite food treat? Well, if so, you are in good company because we certainly do! At the top of my list are lemonade shake-ups! From the time I was little, I have been almost obsessed. I remember when I was growing up our little town had a week long festival and while other kids were saving there allowance to play games and ride rides, I was saving up so I could drink as many shake-ups as I could! The same people were there every year selling them, and they got to know me by name! Now that I'm an adult, I will admit it's no different, except I no longer have to save my money because Adam goes prepared! He knows a large portion of our "fair budget" will be spent on my indulgence. He accepts this and doesn't ask questions! (Just another reason why I love him) And I have passed this love onto my son! So when we were at a fair a couple weeks ago, Adam walked me right over to the booth, bought the largest one he could ( you know the one...the plastic cup that comes with discounted refills) and told them "We will be back soon." To which I replied "Yeah this will last a good 5 minutes." Well, the guys working laughed and didn't believe me. Imagine their surprise when, just as promised, Adam was back in about 5 minutes getting a refill! HA! After we left Alex asked if we could make some at home. I told him we could, but here's the problem. I have made them many times at home and they never taste the same, or as good! Never! But I couldn't totally disappoint my little man, so I told him instead we could make some homemade lemonade! He was happy, and I had another fun summer activity for him to help with. If you love shake-ups as much as we do, but agree they are never as good at home, this lemonade is a lovely substitution on a hot day. And be sure to come back tomorrow to see another fun treat this recipe led to!

Homemade Lemonade
3 lemons, juiced
1 c. sugar                                      
5 c. cold water

Juice lemons using an electric juicer. (I find this gets the most juice out of them. If you don't have one, a reamer or by hand works fine too) In a large pitcher, add lemon juice and sugar. Stir until sugar starts to dissolve. Add water. Stir well. Chill. I like to serve this w/ sliced lemons in each glass

Pick Me Up In The Heat

Many days, I am so busy during the morning and early afternoon I don't even realize if I'm getting tired or not. I guess it's just what I like to call "mommy mode". You know what I'm talking about. We are so busy running here and there with the kids, or cleaning the house, or working, or keeping them entertained we just don't have time to dwell on the fact that maybe we didn't sleep well the night before, or like me sometimes hardly at all. Yes, I'm an occasional insomniac, from way back! I've never been one to go to bed early, and to this day, I'm quite the night owl. I think that is one of the reasons why Adam and I fell in love because he was up all night as a radio deejay and I was awake to listen. (Awwwww....) And then of course, once you have kids, you don't sleep through the night again! Not necessarily b/c they aren't sleeping (Yes, we're the parents others want to smack b/c our baby slept through the night at 4 weeks and never looked back!), but b/c as a mom, you just have so many things running through your head, you can't shut it off to sleep. So anyway, a lot of days, around 3pm I start to hit a wall, and my eyes start to droop. Well, that just isn't allowed! I've got too much to do! My cure? In the winter time I brew a pot of coffee and treat myself to a hot cup and sit down for a few minutes. And usually it works like a charm, I get my 2nd wind and I'm ready to go again. But when the thermometer reads 100+, I'm sorry, coffee is the last thing on my mind. It's just too darn hot. I know some can drink it no matter what the temp, but I just can't. But iced coffee....that's a different story! Why not. Same concept, just cold and refreshing. Plus, making it at home instead of paying $4 in a drive thru somewhere, I save money, and can make as much as I need/want! If you're like me and need a little pick me up, rather in the morning, or in the middle of the afternoon, try this creamy tasty energy boost!

Peppermint Vanilla Iced Coffee Adapted from Folgers
1/2 c. your favorite ground coffee (I like Dunkin Donuts)
3 c. cold water, divided
1/2 c. sugar.
1/2 c. half and half, chilled
1/2 tsp vanilla extract
1/2 tsp. peppermint extract
Ice Cubes

Brew coffee in coffee maker using 1 1/2 cups water. Combine hot brewed coffee and sugar in glass bowl or pitcher. Stir until sugar is completely dissolved. Stir in remaining cold water and half and half. Add vanilla and peppermint and mix well. Chill until ready to serve. Serve over ice.

Olive Garden Favorite

I know I am going to disappoint some of you with this post. I'm sure reading that title some of you were immediately drawn in thinking I was going to share a great pasta dish. But alas, no. However, if you love their salad, and would like a copycat for that, you can find my version, here. And this also reminds me that somewhere I have the recipe for my favorite soup there, and I have yet to make it. Mmmm~ need to dig that out. But I digress. The favorite I'm drooling over today is their peach iced tea. It's a well known fact among my family members, my aunt especially, if I eat at Olive Garden I'm drinking peach iced tea and I'm drinking a lot of it! In fact, if I'm with my aunt, she will flat out tell the waitress "You might as well bring a pitcher." Now, that could also be b/c the only person who comes close to drinking as much as I do is her! Ha Ha! Other peach flavored iced teas I've had don't even come close. Rather it be at other restaurants or the bottled versions, nothing quite tickles my peach fancy as much as theirs. I know one reason has to be b/c they use peach syrup, which has an intense peach flavor, but beyond that I have no idea what makes it so good. Therefore, like so many other restaurant favorites, it was time to recreate this at home. I love this recipe and while it's not 100% spot on, it is the closest thing I've ever had, relatively cheap to make and now I can enjoy it any time I want, straight from my fridge. I know what I'll be drinking by the pool this summer!!

Peach Iced Tea
2 quarts (8 cups) Earl Grey Iced Tea, prepared
3 (11.3 oz) cans peach nectar
1/4 c. lemon juice
1 c. sugar

Combine all ingredients in a large pitcher. Stir to combine and dissolve sugar. Serve over ice and garnish w/ peach slice, if desired.

A Treat With No Regret

All of the summer like temps that we've had these past few weeks in Indiana were not only very welcomed, but also got me thinking about summer time drinks and treats. Not very often do I crave something cold and refreshing in the middle of March and April, but this year spring came early! And thinking of those made me remember the wonderful, delectable treat I was first introduced to last summer. I love ice cream and milkshakes, but here is the problem. In my adult life I've come to discover I can't eat soft serve ice cream b/c it really bothers my stomach. I'm not sure why b/c I can eat "hard pack" all day long w/o a single problem. I also eat tons of other dairy and don't suffer in the least, but soft serve is no longer my friend. And unfortunately, many ice cream shops around here either only serve it, and/or it's what they use in all their shakes, so that leaves me out. I suppose I could just eat it, enjoy it for about 5 minutes and then suffer for it later, but what's the point? Well, one extremely hot Saturday night last summer, we were out shopping and decided to get Alex ice cream. We sat in the drive thru going over the menu seeing if there was anything I could enjoy too, when I came upon something I had never seen before, Boston Cooler.  Adam inquired as to what it was and when the girl told him I decided I would give it a try, soft serve and all. Here's why: it used ginger ale in it! So I'm thinking to myself, not only do I get the refreshing taste of ginger, but also the calming effects it has on my stomach. (There is  reason why it's been the "go-to" drink for flu sufferers for years!) I took that first sip and was instantly hooked! It was so good!! And I was absolutely right. The ginger ale totally counteracted the effects of the soft serve ice cream in it. This is so simple I can make it at home any time I am craving it and enjoy it all summer, or this year, spring long!

Boston Cooler
8 oz. ginger ale ( I like Canada Dry)
2 large scoops vanilla ice cream

In a large glass, place one scoop of ice cream. Pour ginger ale over. Add other scoop to top. Serve w/ straw and a tall spoon. You can also make this as a blended drink. Add all ingredients to blender and mix until well combined.

Little Princess

When I was a little girl, my mom and dad each had a nickname for me, neither of which was "princess." My dad called (and still does) me "Squirt" and no matter how old I get my mom will always refer to me as "Punkin". In fact, this year my birthday cake read "Happy 31st Birthday Punkin". And I'm okay w/ that. See, we're a family of nicknames. From the grandparents (mine) all the way down to Alex, and even Adam once he joined the family, we're always calling each other something other than our given name. Actually, if my parents, or even my husband refers to me as "Krista" I know something is wrong! But when Adam and I got married, somehow I was pinned "Little Princess" by my Daddy. Okay, so there's no question where it came from, or why, I know the exact moment. I always knew my wedding day would be my day. Yes, I was one of those brides. I wanted the big church wedding, the elaborate gown, the fun reception.....the whole nine yards. And God love them, my parents gave it to me. The dress? It was a white jewel encrusted couture gown that took 6 months to make, and topped off w/ 7 1/2 foot train. It was my dream dress and the minute I put it on I knew it was the one. And to complete the look, of course I needed a tiara!! So I was standing in my parents' living room showing my dad the gown he had purchased and had just placed the veil on my head w/ the tiara when he said "You are definitely a little princess." From that moment on, it became my new nickname. Heck, we even have video of him at our wedding hugging me singing "Little Princess, Little Princess". (Don't tell him I told you that!!) My husband and child have even picked up on this trend, refer to me as such and even threw me a "Princess Party" for my birthday this year. They had a princess cake, a different tiara for me to wear and a princess cup! So you can imagine my excitement when birthday shopping w/ my mother in law, we found the perfect wine glass for me to use! I had been wanting a "special" glass for sometime and when we found this one, we both smiled, laughed and said it was meant to be. And this is my favorite drink to have in my new glass--a little something to help the little princess to unwind after a long day!

Blackberry Spritzer
1/2 c Blackberry Merlot
3/4 c. Lemon Lime Soda, chilled
Lemon for garnish
Stylish wine glass, optional :-)

Pour wine and soda into glass. Mix well. Garnish.

Cheers to 31!!!

So I'm not really one to get on here and say "Yay Happy Birthday To Me"~ But, I guess what I'm trying to say is "Happy Birthday to me". Honestly though, it's truthfully just a segway to talk about alcohol! I'm not an avid drinker, but I do like to partake every now and then. The occasional margarita, beer (only if a kind I like), wine spritzer, and most of all, "girly" fruity drinks! And if it comes an umbrella in it, even better! Well, last year at my sister in law's wedding, a close friend of the family decided I needed a drink, and something yummy. So she introduced me to a new friend~ the mimosa!! Yes, I know it's kind of sad that I went 30 years w/o one, but alas, I did. Well, it was love at first sip. So simple, so delicious and I love orange juice, so why not?? But here's my secret- I'm not a fan of champagne! So much so I only took 2 sips at our wedding for the sake of a toast and a great photo opportunity! But put it w/ some juice and I'll keep coming back for more! I've been very blessed in my 31 years. I've had a successful career, married the man I love and adore, had a beautiful son who amazes me more and more every day, and have gotten to make him my main priority every day, and now find fulfillment and joy in something I love doing and sharing w/ all of you! I can only wish 31 treats me just as well.   If someone else out there is having a birthday today too, I hope you get to "cheers" yourself  and have a blessed, fantastic day!

Mimosa
1/2 c. champagne
1/2 c. orange juice
Strawberries for garnish

Mix and chill well. Garnish glasses w/ strawberries, or even add to for extra flavor.
*As long as you use equal parts juice and champagne, these are easily adaptable to a crowd!

Mommy and Monkey Treat

With the days getting colder by the minute, and the fact that we had our first snow fall last week, (And while it only lasted a brief amount of time, melted right away, and the sun came out after, it was still SNOW!) we all have to face the fact that winter is almost here; and before we know it, we'll be shoveling ourselves out of the house on what will seem like a daily basis.  Well, except for those of you in Florida and other "tropical" states. For you.....well, my mom always said if I can't say something nice, not to say anything at all....) I'm always on the lookout for warm and comforting after school treats for Alex; and if Mommy can enjoy it too, all the better. We love Nutella. That is no surprise to anyone reading this. So you can imagine how thrilled I was when my cousin Tricia over at Recipe Roundup, showed me a brand new Nutella recipe she found. I immediately "pinned" it to my board on Pinterest, and couldn't wait to try it. This ingenious drink came from Cookin' Cowgirl and I am eternally grateful! It was SO yummy and the perfect thing to warm a monkey up after a cold day!

Nutella Hot Cocoa  from Cookin' Cowgirl


2 c. 2% milk
3 TBS Nutella
1 tsp Hershey's Cocoa Powder
1/4 tsp ground cinnamon
1/8 tsp vanilla
Pinch salt
Mini Marshmallows or Whipped Cream, optional

In a small sauce pan over low heat, warm milk. Once warm, whisk in Nutella and stir until smooth. Add cocoa, cinnamon, vanilla and salt. Continue to whisk until it comes to a boil. Pour into mugs and top w/ marshmallows or whipped cream.

Potpourri in A Glass

Before Alex was born I loved having scented candles burning in the kitchen making it smell delicious regardless of what I was or wasn't cooking. Some of my favorite ones were in the fall: cinnamon, apple, pumpkin, etc. Just having those scents wafting through the house made it seem so "homey' and brought the splendor of autumn inside. But alas, my little monkey has severe allergies and my candle days are long gone. The scents I used to enjoy so much just aren't worth listening to the poor little man sniffle, sneeze and be miserable. Hence why I love finding dishes that I can bake or cook that bring delicious smells back into the kitchen. When I saw this dish on McCormick.com I knew I had to make it b/c the taste sounded devine, but little did I know the smell would be just as good. As soon as it starting simmering on the stove Alex came into the kitchen and asked "what smells so good." Then when Adam came home from work he said "wow it smells like fall in here." So even if this doesn't appeal to your taste buds, put a pot on the stove, let the aroma over take the house and just wait for people to show up b/c they will be able to smell it down the street!

Autumn Apple Brew
64 oz bottle apple juice
2 TBS honey
1 TBS cinnamon extract
1 tsp whole cloves
1/2 lemon sliced

Mix all ingredients together in a large pot. Simmer for 30 minutes. Strain and serve warm. Refrigerate leftovers.
