Chicken and Noodles
2 boxes chicken broth
1 24oz. bag frozen egg noodles
1 package chicken tenders
Olive Oil
Salt and Pepper
3 tsp flour
2 cups water
To prepare chicken: Coat w/ olive oil and season w/ salt and pepper. Roast in a 400 degree oven for 30-40 minutes. Allow to cool and then shred w/ fingers.
In a large pot, bring broth plus water to a boil. Add noodles. Bring back up to a boil and reduce heat. Simmer for 20 minutes, or according to package directions. When noodles are almost done, carefully remove 1/2 c. broth w/ a ladle. Mix hot broth w/ flour and whisk until thick. Pour back in and add chicken. Simmer until done, about 10-15 more minutes. If it doesn't thicken as much as you like, repeat flour w/ broth mixture until desired thickness. Season w/ salt and pepper to taste.

I'm going to try your recipe for this. I've always boiled the chicken because that is the way my mom did it but after reading this, I'm imagining how much better the flavor of the roasted chicken will be. Thanks!
For any recipe that calls for cooked chicken, I always roast it. It adds such a depth of flavor, and for me it's easier to set it in the oven and "forget" about it.
I grew up eating chicken and noodles or beef and noodles over mashed potatoes too. Ultimate comfort food.
That's funny. I wonder if it's a "regional" thing. It definitely caught my attention when I scrolled by this post that it was odd to have two starches together. Don't get me wrong, I love mashed potatoes AND pasta, and if they were in front of me, I would definitely reach for both. It just wouldn't occur to me to make them together. It's kinda like ordering a sandwich at Panera and getting a chunk of baguette as a side. Just seems wrong somehow (but I don't pass that up either)! ;)
Hey, it's posts like this that spark conversation and set you up to meet new folks. And you're right, to each his own, or as my grandfather would have said ... It all goes in the same spot.
@ Chris, you're right! I never thought of it that way, but I also scoff at getting a sandwich at Panera w/ the bread on the side. I always think "why" but for this I don't think twice. That cracks me up!!! I just never thought about it! Lol

I've never heard of doing that but it sure does sound delicious! I'm also new to the frozen noodles but I remember Pioneer Woman mentioning them one time as well. I'm going to have to give them a try because this looks delicious!
Looks Delicious we are generally a 1 starch family if only to make sure we all eat our healthy veggies.

I grew up with a diabetic dad, so we didn't have more than one "starch" at the table because it would spike his blood sugar too much. This sounds good, though!

I make it with canned chicken as a time saver after a busy day at work. I agree with one of your followers, it must be a regional dish. I'm not from Indiana and had never heard of it until I moved here but love it now.
