Holiday Potatoes Take Two

Last year, in fact, almost a year to the day in fact, I shared my Crock Pot Roasted Potatoes and entitled the post "Holiday Potatoes". They were the perfect side dish for the holidays because the slow cooker does all the work for you, so you can either focus on other things needing stirred and baked, or you can simply enjoy your guests instead of being stuck in the kitchen all day. Well, even though they don't involve the Crock Pot this time, I am back this year with yet another potato dish that is super flavorful, and super easy! Can you say 3 ingredients?? These would be great with both a "sit down" meal, or more of a pot luck style. Once roasted at home, they would travel very well, as long as you can keep them warm. ( I love those travel hot packs that go inside portable carriers!) I think the flavor of onions and potatoes is kind of like peanut butter and jelly; they were just meant for each other. The smell coming from your oven as these roast will announce to your family and guests there is something absolutely delicious in their near future! For easy holiday entertaining and meal planning, your Everyday Mom certainly has you covered by way of the slow cooker or oven!

Onion Roasted Potatoes
2 lbs. small red potatoes, halved or quartered depending on size
1/3 c. vegetable oil
1 (1 oz.) package onion soup mix, dry

Preheat oven to 350. In a large plastic bag, place oil and soup mix. Add potatoes and close tightly. Turn over and over coating potatoes well. Place potatoes on a large baking sheet and bake for 45 minutes. Increase heat to 450 and bake an additional 15-20 minutes until golden brown and crisp. Stir occasionally during both cooking temps.
