With Alex at school all day, lunchtime usually means whatever I can fit into the 10 extra minutes I have to eat between checking items off my "to do" list. But every once in a while I take a few extra steps and treat myself to something I've purposely planned out. This is the first thing I remember making for my Daddy. When I was younger I loved to go into the kitchen and pretend I was on a cooking show. I would throw this and that into a bowl, talk to my "audience" while doing so, and then my mom was such a great sport, she would let me cook it. But sometimes I would make something that was actually eatable! This came about on a Sunday night when I decided I would make supper. From the minute he took the first bite, this became my dad's favorite way to eat tuna. To this day, he will request my mom to make it, but to have the "real deal" he calls me. (Okay, mom can make it just as well as I can, but just let me have my moment) This makes a great lunch for one, or make a little extra to share--either way, pretend you have a live audience too, it's fun :)
Tuna Salad
1 can white albacore tuna in water, drained
1/4 c. chopped white onion
1 hard boiled egg, chopped
1 1/2 TBS sweet relish
3-4 TBS mayo
Salt and Pepper to taste
Place tuna in a bowl and break up w/ a fork. Add onions, egg, relish and mayo. Mix well. Season w/ salt and pepper. Chill. Serve on toasted bread, w/ crackers, pita, etc.
