Another From My Past

I have shared with you countless recipes from one of my kitchen inspirations, my "Grammy". I can't even begin to list all of the dishes I've made because she made them first, or how many yummy things that to this day at the age of 31 I think only she can still make the best! This salad is something I remember her always having during meals in the summer months. It was one of those things I didn't even question how or why b/c it just seemed to always be in the fridge. Now I'm sure she didn't have an endless supply of it prepared each morning waiting for the taking, but to me it appeared that way. Of all the salads she has made in my lifetime, this is still one of my, and my dad's, favorites. Yes it tends to be something I make more in the summer, but I will fully admit we've had it for Christmas dinner before too! If you are planning a Mother's Day luncheon this weekend (Yes, it is only 2 days away!) here is a perfect side dish to add to your menu. Now, there is mayo in it, so if you're celebrating outside, please be aware of that and careful. I don't need any moms sick on my account!  Thanks Grammy, for giving me yummy food to eat for all these years and now share with my family, but more importantly so many happy memories of eating it with you!

Broccoli Salad
1 bunch broccoli, florets finely chopped
6 pieces of bacon, cooked and chopped
1/2 c. sharp cheddar cheese, shredded
1 small white onion, chopped
1/2 c. mayo
2 TBS white vinegar
2 TBS sugar
Salt and pepper to taste

In a large bowl, combine broccoli, bacon, cheese and onion. In a small bowl, whisk together mayo, vinegar and sugar. Pour over broccoli mixture. Season w/ salt and pepper. Stir well to combine. Chill until serving.

I make one very similar, red onion instead of white, raisins & sunflower seeds are added to what you posted. My recipe doesn't call for cheese but that sounds yummy! I think I will add that in next time.
