Caramel Sauce from Simply Recipes
1 c. sugar
6 TBS butter
1/2 c. heavy cream
Pour sugar in a large, heavy bottomed stock pot, over medium heat. As soon as the sugar begins to melt, stir vigorously w/ a wooden spoon or whisk. When it starts to boil, STOP stirring. It should be a golden amber color. When all the sugar crystals have melted stir in butter quickly until melted. Remove from heat, count to 3 and slowly add in the cream while stirring. Mix to combine and let cool in pan for a few minutes. Transfer to another dish or jar to finish cooling. *BE CAREFUL* The pan will be extremely HOT. Refrigerate leftovers.
*NOTE* When you add the butter and the cream, the mixture will bubble up. Make sure your pan is large enough to accommodate this.

I was just thinking about making caramel sauce for apple dippin, can't see the point in buying it if it's easy to make. I just forgot to get cream :(
I'm a caramel fantatic and will most definitely have to try this. For now, I 'pinned' it...soooo glad you shared.
