Mom's Potluck Pleaser

When I first came up with the name of my weekly "linky party", Church Supper, the first thing I thought of was all the basement church potlucks from my childhood. And the dish that immediately came to mind, was my mom's baked pineapple. I remember her always getting rave reviews for it, everyone asking for the recipe, and then being shocked when they learned just how simple it was. The best part of this dish is that it didn't matter what time of day the dinner was, it was the perfect side dish, fruit, or dessert. Yes, it falls into all of those categories and is "just right" in each one. My mom originally got this recipe from her mother in law, but from the moment she made it for the first time, it was all hers. I had actually never made it myself before. I always waited to eat hers, but since she can no longer have pineapple, she doesn't make it as much as she used to. So it was time for me to carry on the tradition. Oh, it was just as good as I remember and the "boys" loved every bite too. The next time you need a crowd pleaser, take one from Deb's kitchen! (That's my mama) It is so unique and delicious, I guarantee  you won't regret it!

Baked Pineapple
1 (20 oz.) can crushed pineapple, drained slightly
5 slices white bread, cubed
4 eggs
6 TBS butter, room temperature
1 c. sugar

In a large bowl, cream butter and sugar. Add eggs and beat well. Mix in bread and pineapple. Pour into a greased 2-3 quart casserole dish and bake at 350 for 1 hour, and it's brown and bubbly.

Can the sugar be substituted with equal or splenda? My husband is diabetic. Looks delicious but would put him in a coma!

Yes, it can. It would also use 1 cup Splenda. I'm not sure about Equal.
