Creamy Cucumber Salad
2 large cucumbers, peeled and thinly sliced
1 small white onion, thinly sliced
2 tsp salt
Dressing:
1/2 c. heavy cream
2 TBS white vinegar
1/4 tsp salt
1/8 tsp pepper
Combine cucumbers, onion and salt. Let stand at room temperature for 1 hour. (I sit mine in a colander in the sink b/c it tends to draw out moisture) Drain well. Combine dressing ingredients. Place cucumber mixture in a large bowl and pour dressing over. Mix well to combine. Chill several hours before serving.

I love cucumbers, but had never had them with this dressing. tried it today-labor day week-end. it is great-thanks for all the great receipes you share. this one is another keeper. Karen
