Crisp and Cool

Those 2 words describe many things we like to eat in the summer! I think everyone eats more "rabbit" food during the warm months. Between the heat and not wanting anything too heavy, to the beautiful produce coming out of our own backyards or the local Farmer's Market, salads are just too good to resist. In my old age (ha! I know those of you who are a little longer in the tooth are rolling your eyes at my 30 year old self saying that) I have become much more adventureous when it comes to the greens. I used to be a tossed salad only kind of girl. Not b/c I was picky. I just wasn't introduced to more "sophisticated" salads until I was an adult. I have a few in my reprotaire. (Check out my spinach salad or Greek salad) and am always looking for new interesting combinations. When I saw this in this month's Everyday with Rachael Ray it jumped off the page at me. One b/c celery?? Who would have thought to make an entire salad w/ it as the main ingredient. Isn't it for peanut butter, ants on logs, and veggie platters? And two, b/c it included blue cheese which Adam LOVES. I have grown to like it in certain things and think the tangy flavor of it, w/ the sweetness of celery are a nice compliment. I read the recipe to Adam and he agreed it needed to find it's way to our table, and soon. So why not on a day we're grilling and it's supposed to be in the upper 90s? Celery: it's not just for snacking anymore!

Celery Salad w/ Blue Cheese

1 TBS. apple cider vinegar
1 tsp. dijon mustard
salt and pepper
1/4 c. olive oil
1 bunch celery, sliced 1/4 inch think (can include greens if desired)
3/4 c. chopped walnuts
3/4 c. crumbled blue cheese

In small bowl, combine vinegar, mustard and 1/4 tsp each salt and pepper. Whisk in oil. In a large bowl, combine the celery, walnuts and blue cheese. Add the dressing and toss to coat.

That's Just Who I Am

I have come to a very absolute conclusion. I am a citrus kind of girl! I like berries. I like chocolate. But for the most part if there is a choice between all three, 9 times out of 10 I'm going to go w/ the citrus choice. Orange, lemon, limes, they are all at the top of my favorites list. When I was little and we visited my grandparents in FL, their friends had a lemon tree in their backyard and one of my most favorite memories of those trips is picking lemons for fresh lemonade--once you drink that you'll never tolerate concentrate again! This probably doesn't come as a shock to all of you. After all you read these recipes every day and have w/o a doubt noticed this pattern: Mandarin Orange Cake, Chicken w/ Artichokes and Lemon, heck, I can't even marinate a cucumber w/o throwing in a little citrus zing (Marinated Cucumbers)!! The only conclusion I can come to is the fresh taste it leaves in my mouth. I like bright, verdant, clean flavors that give my food a little zip and almost jump around in my mouth. I needed a quick dessert, but something a little less sweet than the banana pudding we had last week. It was fantastic, but also very rich and this time I wanted something lighter. I actually found this on a Mexican cooking site as a reccomendation to go w/ spicy food b/c it would cool it down. (You know, the same way a crisp cold margarita does!) This is one of those JELLO (oh, the wonders of) "salads" that can technically be considered a side or a dessert. But like all the others I've ever eaten that fell into this category, I choose dessert. Every Thanksgiving my Grammy would have 2 or 3 "salads" similar to this one and I always ate them last. Not dessert mind you, after all there was pumpkin pie waiting, but a precursor to dessert :) Never along side my turkey and mashed potatoes. But if you prefer it as a side dish, I can see how it would make a perfect palate cleanser. For us though, it's a simple yet elegant dessert that Mommy can make when she is so dog tired picking up a spoon takes effort ,but since it has citrus in it, she will suck it up and enjoy!

Orange Whip Delight

12 oz. Cool Whip, thawed
1 20 oz. can crushed pineapple, drained
2 10 oz. cans mandarin oranges, drained
3/4 c. chopped walnuts
1/2 c. sweetened coconut
1 6 oz. box orange JELLO (I'm guessing any flavor would work)
1 1/2 c. hot water

Put JELLO into a large bowl. Pour in water. Stir well to dissolve. Let cool on counter until cool enough to put in refrigerator. Chill in fridge for 15-20 mins. You DO NOT want it set. When it's cool, and you stick your finger in, it should leave an orange coat on your finger. It should still be LIQUID form. Add Cool Whip and stir until mixed well. Add pineapple and mix well. Fold in oranges carefully as not to crush them. Add nuts and coconut and mix to combine. Chill for at least 30 minutes before serving. The longer is sits, the more firm it becomes.

In The Spotlight

As I sat down to write this post I was remembering back when I shared a whole list of various glazes for ham thinking it was only a few months ago. Sometime this past winter probably. Yeah, it was August of last year! Almost a whole year ago and I totally dropped the ball. See, I said at the time I was going to try each and every one of them---oops. I have used a couple, and I guess those were so good I stopped there. And truth be told I probably would have turned to the "stand by" again last night had I not been out of brown sugar. (See, these things happen when you lounge at the beach for 2 weeks and then try to cook supper w/o visiting the grocery store first) So it was time to find a new one. One w/o brown sugar.....or anything else I was missing out of the fridge. I read down the list and found one w/ 2 ingredients---both of which survived our vacation! Since the title has "baked" in it, I'm guessing it would taste fabulous out of the oven, but I grilled our ham steaks. I love ham on the grill. Who am I kidding? I love pork products on the grill!! The sweetness of the syrup and the tangy of the mustard are very nice compliments to each other and will definitely become another "go to" for me. Now that I've checked another one off that initial list, I'm going to make a conscious effort to try them all. But for now, this simple 2 ingredient star can enjoy it's time in the spotlight!

Baked Maple Glaze

2/3 c. maple syrup
1 TBS (heaping) prepared yellow mustard

Mix well w/ whisk until combined. Dry ham steaks w/ paper towels. Brush w/ glaze. Grill 3-4 minutes on each side until heated through, using extra glaze for basting.

Fresh From The Sea

So, I have a secret I kept from all of you (and rather well I might add). We spent the last 2 weeks on the beach in Florida! That's right. Every time I blogged I was doing so from the comfort of my lounge chair by the pool or on the beach. Okay, maybe I was in the condo while blogging, but I was watching the waves roll in as I did. We vacationed at our annual spot, New Smyrna Beach and it was AMAZING as usual. After everything we've been through these past few months, it was absolutely wonderful to kick back, relax and reconnect as a family. Please don't be insulted I kept this from all of you, it's nothing personal. For safety reasons, we never advertise we aren't home:) But I assure you all the things I said I cooked while I away, I truly did. That's the great thing about staying in a family condo, I can cook, we can eat favorite dishes and we can save money! This dish happened very last minute. See, my boys love to fish in Fl (or anywhere) and until this trip, they have never caught anything from the surf. But this year? They hauled them in ! 17 fish were their take and they could have probably caught more if it weren't for the storm rolling in. Alex was SO excited. He was jumping up and down and squealing w/ each that got put in the cooler. These were small "stripers" as they are called down there- a miniature striped bass. So they looked to me to decide what we were going to do w/ them. Not very often are we lucky enough to catch fish in the morning and have them that evening for supper--can't get much fresher than that! Well, they were just calling out to me to be beer battered, fried and served w/ my signature tartar sauce! Now I'm not the hugest fish fan (that tends to happen when your dad fishes ALL the time when you're young and you have to eat it A LOT) but I have to admit, these were SO good. They reminded me a lot of Long John Silver's fish, which I love and all 3 of us were stuffed we ate so many! We're home now, and already whining b/c there is no beach in our backyard and the sun isn't quite the same. Already counting the days until next year....

Beer Batter  Adapted from Epicurious

1/3 c. flour
1/2 tsp salt
1/4 tsp pepper
1/3 c. flat beer (I actually poured mine from the bottle w/o letting it go flat)
vegetable oil for frying ( I used Safflower)
*I double this for the amount of fish we had*

Pat fish dry w/ paper towels. Whisk flour, salt and pepper in a large bowl to combine. Whisk in beer. Stir well until no clumps. Heat 1/2 inch oil in pan to 350. Fry fish about 4 minutes on each side until golden. Keep fish separated. Fry in batches and let oil come back up to temp in between. Drain on paper towels and keep warm until serving.

Tartar Sauce


1 c. mayo
3 TBS sweet relish
2 TBS fresh lemon juice
salt and pepper to taste

Combine all and chill until serving.
