Perfect Everytime

Like most good things in life, I learned how to make meatloaf from my mom. She does after all, makes the best there is. I love meatloaf, and will eat it other places as well, but if I want my favorite, I always have to go home. It's what I request for special meals, birthday suppers and have even passed my love of it onto Alex. When Maa Ma asks what he wants for his birthday meal every year, he picks meatloaf-every time. So you can understand my disgust when I tried to make it the first time and it was awful. And I mean horrid! In fact, it wasn't until just about a year ago, that I mastered mom's meatloaf; and there really isn't a specific reason why it started working. I think I just did it enough that practice made perfect. The only difference between mom's and mine is that I beat my eggs before I add them to the meat mixture. That's it. Why? B/c I saw Ina Garten do it and thought it made sense. So was it the eggs that made the difference? Who knows. But what I do know is that it turns out perfect every time!

Mom's Meatloaf


2 lbs. hamburger
2 eggs, beaten
1 small onion finely chopped
Salt and pepper
Bread crumbs (add a little at a time until meat binds together and some moisture is gone)

Mix all ingredients together well using hands. Work it kind of like "dough" mixing and binding. Form into loaf and bake in roasting pan @ 350ยบ for about 2- 2.5 hours.  If desired put a little ketchup on top.

*Always use 1 egg for each pound of meat*

Yummers! And just the way meatloaf should be, with none of that pesky catsup on top!!!

My husband loves ketchup on top, and I hate it. My son loves to dip. So the ketchup goes on the table and they can both have it on the side!

we love meatloaf this way and with a topping-you should try mixing 1/2 cup of ketchup with 1/2 cup of brown sugar(mix well). spread the topping on top before baking-this is so good and the idea comes from a friend and also from the Willows Restaurant in Huntertown.

That would be good if I liked it topped :) Mom never put any topping on hers, so I don't like it. The boys dip theirs in ketchup. Even if I order meatloaf out I make sure it is "bare". lol

One of my least favorite foods! LOL!!

I was smiling at the part about you guys choosing your birthday dinner. We always did that it my house growing up and now I do it in my home too. Without fail... every single time, I would ask for a chicken liver dinner. Used to drive my siblings nuts! LOL!!

Lol, I know many people don't enjoy meatloaf, and I will admit besides my mom's recipe, there aren't many I do like.

That's funny about your bday dinner. When I was little, until the age of about 7 my favorite food on the planet was my Grandma's Liver and Onions. What was wrong w/ me???? Lol

I never loved topping on my meatloaf but my kiddos and hubby love this topping. 1 c ketchup, 1/2 c brown sugar, splash or two of worecestershire (lol, I can't spell it) and a dash of mustard. I have grown to love this sauce BUT I only put it on half for my mother who only wants her meatloaf plain. I feed my 7 kids plus three adults so I can get away with putting it on half because I have to use 5lbs of meat...lol. A smaller meatloaf may be harder to top only half of it.
