And What We Had With The Soup

Yesterday I shared w/ you the soup I made to make my Monkey feel better. Today I'm posting half of the other half of that meal. The soup was just a starter, and along side I made 2 of his other favorite things: pot stickers and rice. I will admit, I take help from the store when it comes to the pot stickers. I get them right in the freezer section and we love them. I'm sure I could learn how to make them from scratch, but to be honest w/ you, I don't want to. LOL Seriously though, I think sometimes we all need to take help where we can, and make our lives just a bit easier. And if that means frozen pot stickers for us, I'm okay w/ that! Now along side those, I though a teriyaki rice would be perfect, and that couldn't have been easier. The pot stickers take about 10 minutes to cook, and w/ this not taking much longer, I can have a simple yet yummy supper on the table in no time. And that's what this every day mom is all about, especially when her Monkey is under the weather!

Teriyaki Rice
4 TBS olive oil
1/4 c. diced white onion
1/4 c. shredded carrot (I buy mine pre shredded in the produce section)
1 green onion, chopped, extra for garnish
4 c. cooked rice
Teriyaki Sauce to taste

In a large skillet, or wok, heat oil on medium heat. Saute onions and carrots until tender. Add rice and teriyaki sauce until rice is heated through. Stir in green onions and garnish w/ extra.

Soup For a Sick Monkey

When your baby doesn't feel good, Mommy doesn't feel good. And it doesn't matter how old that baby is! Mine is 7 and anytime he is under the weather, I suffer just as much. Sometimes I think a little more b/c he's a trooper when he doesn't feel well, still eats, plays;sometimes when you look at him you wouldn't believe he is sick. Me on the other hand, I'm the one making sure meds stay on schedule, up half the night listening for him, running around making sure he's warm, comfortable and trying to make it better however I can. What can I say? I'm a Mommy and that's my job :) So last week when he wasn't feeling well I knew exactly how I wanted to treat him, and at the same time get something warm in his belly. After all, "feed a cold, starve a fever"! And a great thing to feed that cold? Soup! In this case, not just any soup, Hot and Sour Soup! Alex loves going to our favorite Japanese restaurant for sushi, but I think something he enjoys even more is eating soup out of their cute bowls and spoons. I'm sure you know the ones I'm talking about. They are pretty standard at any Asian restaurant I've ever been too. From the first time we ever took him there, he has always gotten such a kick out of those spoons! We are lucky enough to have an Oriental Market here in Fort Wayne, and Adam has shopped there more than once. So on his latest trip, he picked up a set of those bowls and spoons and I knew giving my monkey some yummy soup out of those was just one more way to make him feel better! He walked into the kitchen was his eyes got as big as saucers~"Mommy, you got the bowls and the spoons," The smile that lit up his face was all the thanks I needed. Even if you have to eat this out of a "regular" bowl, it's still pretty tasty and might just hit the spot the next time you're feeling a little under the weather!

Hot and Sour Soup

4 c. beef broth
3 TBS soy sauce
1/2 c.button mushrooms, diced
1 tsp garlic chili sauce (Use this to taste. For Alex, I didn't want it too hot)
1/4 tsp pepper
1/4 c. white vinegar
1/3 c. bamboo shoots, julienned
3 oz. block tofu, cut into 1/4 inch dice, optional
2 TBS cornstarch
2 TBS cold water
1 egg beaten
3 green onions, diced

Bring broth to a simmer in a 2 quart saucepan. Add soy sauce, mushrooms and garlic chili sauce. Simmer for 5 minutes. Add pepper, vinegar, bamboo shoots and tofu. Simmer for 5 minutes. Combine the cornstarch and water. Stir until mixture is smooth. Add to soup and stir well. Simmer for 5 minutes until thickened. Pour beaten egg in slowly and stir soup in one direction. Stir to combine. Take off heat. Serve w/ garnish of green onions.

Don't Let The Name Fool You

Upon reading the title of this recipe some might be turned away thinking, "fried...well, that leaves me out". But do not let the wording fool you and/or scare you. This time frying is not only tasty, but really not bad. In fact, I guess I could have substituted it for "sauteed", but then I wouldn't have had this fun introduction! Are you a fan of butter beans? We sure are, in fact, we love 'em. For those who don't know, butter beans are actually lima beans ; and are a great source of fiber and virtually fat free source of protein! They are both good and good for you, can't get much better than that. For years I've been making them, with just a little butter, salt and pepper. But this time I wanted to "jazz" things up a little bit. This recipe is so easy and really gives them a different flavor, and even a little different texture b/c of the "frying" aspect. Plus since the whole thing is done in olive oil you don't have to feel guilty about it. (You do know olive oil is good for you, right?) So if you're looking to try a new vegetable, or just want a new way to eat something you do anyway, don't let the name fool you, these beans are figure friendly, even if fried!

Pan Fried Butter Beans
2 cans baby butter beans, rinsed, drained and dried
6 TBS olive oil
1/2 tsp dried thyme
1/2 tsp dried parsley, extra for garnish
Salt and Pepper to taste

Heat olive oil over medium heat. Add beans and cook for a few minutes. Add seasonings and continue to cook, stirring occasionally until beans become slightly brown on the edges. Be careful, once they start to brown, they can burn very easily. Garnish w/ parsley.
