Old Family Favorite

I have shared my extreme love for casseroles many times. But what makes that love grow even more is when a casserole takes a dish that I already love but makes it easier and quicker because it's in one dish. A good example of this is my Unstuffed Pepper Casserole...stuffed peppers aren't difficult, but sometimes they can be a little time consuming for a weeknight, so putting the ingredients together in a casserole form gives you the flavors you love with the ease you need. And today's recipe is another perfect example of this same idea. 

I've been making this since Alex was just a baby, which is essential to why I started making it in the first place. I was a stay at home mom with an infant, and some days I was lucky to get a shower, let alone slaving away in the kitchen all day. So when I got it in my head I wanted to try my hand at Cabbage Rolls, I began researching the Internet and my pile of food magazines looking for a good recipe. Well, what I discovered was they are another recipe that can sometimes need a little extra time; and to be honest, I just didn't have it to give, so the idea got tabled. But then not too long later, I found this! The description even said "Do you love cabbage rolls, but don't have time? Then this casserole is perfect for you!" It was like someone read my mind! This quickly became a "go-to" meal for me that my boys love. It's something I can make after a long day and feel good about giving my family to fill them up and satisfy them. Plus, it makes great leftovers for lunch the next day too!

If you love cabbage rolls, or have been wanting to try them, but simply don't have the time (Or let's face it, the energy) take my lead and try this instead! You won't be disappointed!


Cabbage Roll Casserole 
1 lb. ground beef
1 small head cabbage, chopped
1 medium onion, chopped
2 cloves garlic, minced
1 (15 oz.) can tomato sauce
8 oz. shredded mozzarella cheese
1/2 tsp. dried thyme
1/4 tsp. dried sage
1/4 tsp. dill weed
1 c. cooked brown rice
Salt and Pepper to taste

Preheat oven to 375. Grease a 9x13 pan. Sauté beef, onion and garlic over medium heat. Drain fat if necessary. Stir in 1/2 tomato sauce and seasonings. Bring to a boil. Reduce heat, cover and simmer for 5 minutes. Stir in rice and heat through. Remove from heat.

Layer 1/3 of cabbage pan. Top w/ 1/2 meat mixture. Repeat layers. Top w/ rest of cabbage and tomato sauce. Cover w/ foil and bake for 45 minutes. Uncover and top w/ cheese. Bake 10 more minutes.

Weekend Company {Guest Blogger Kristin}

Good Morning! I'm so excited for today's guest! She is a fellow mommy, blogger and just a terrific person. It's funny because Kristin and I just met last June but we've probably known each other's names for at least 10 years! Let me explain. She is a very close friend to my brother in law, and it was his birthday party we actually finally got introduced at, but I had heard such lovely things about her for such a long time I felt like I already knew her. How did it take that long for us to meet? I'm honestly not quite sure! But I was so happy to finally do so, and within 5 minutes I knew I had found a kindred spirit. You know what I'm talking about? When you meet a person and you feel like you've known them your whole life and you instantly feel a deep connection. That's exactly how I felt sitting there talking to her for the first time; and since we've become fast friends. I am so blessed she came into my life, and I treasure our friendship so much. So please, for the first time, welcome Kristin to EMM~


Kristin Folkerts: Part time case manager, 24 hr stay at home mom, and all time crazy person!

I have a Master’s degree in Applied Gerontology.  I have worked with older adults and people with disabilities since 2001 officially but been a caregiver for older adults since I was 9 years old.

I met my husband in college but we did not find each other until 2004. We have our miracle son Coen born in 2011 and recently found out we have our second miracle on the way!  Motherhood is the hardest, most amazing, craziest thing I have ever done. I never feel like my head is on straight but I am so in love that the loss of control in my life is actually okay with this control freak!

I have recently started a blog called Nuts of the Round Table.  http://nutsoftheroundtable.blogspot.com/  As most families contain some "nuts" and I find that things are always happening around the table - here I am with stories, crafts, recipes, care giving advice, and more.

I like to think I am a bit of a foodie and I love to read cookbooks like they’re one of those Twilight books!  I am generally not one to eat a lot of meat as I find a lot of the treatment of animals to be incredibly cruel and immoral.  I try to feed my family fun and delicious meals where you don’t even miss the meat.  The funny thing is now that I am pregnant all I want is beef!  Go figure!  But I wanted to go along with my good friend Krista’s theme of crock-pot goodness so today is a meatless delight in the crock-pot that my family loves.

Refried Bean Soup
1 (16 oz.) can vegetarian spicy refried beans
1 (15 1/4 oz.) can whole kernel corn (frozen works well too)
1 (15 oz.) can black beans, rinsed and drained
1 (14.5 oz.) can chicken or vegetable broth
1 (14.5 oz.) can diced tomatoes with jalapenos (or green chilies if you like it less spicy)
1/2 c. water
1/4 c. salsa (I prefer fresh that you find in the deli area of grocery store)
1/2 tsp. ground cumin
Shredded Cheddar, to serve
Tortilla Chips, to serve
Sour Cream, to serve

Directions:
Combine everything in Crock Pot. Cook on low 3-4 hours, stirring half way through if you are able. If you need a little more kick, add 1 tsp of chili powder, Serve with cheese, chips and sour cream.

Mr. Everyday's Suggestion

Most of the time my husband's contribution to what we are eating is sitting down, clearing his plate and saying "Mmm...that was really good." It's not that he isn't allowed input, or doesn't want to give any, he just knows the kitchen is pretty much my domain and he trusts in the fact that if I'm stirring, chopping and sauteing, it's going to be something yummy. But every once in a while, he will see something that peaks his interest and then I get a random email through the day "Saw this and thought it looked good." And that's exactly how this recipe came to me last week.

He happened to see them online and then brought the recipe home to me. The minute I saw it, apples when on my grocery list for the next day. It's a pretty genius idea...I wish I had thought of it! They reminded me of my grandma's Apple Dumplings a little, and I knew we would love them! What's not to love with something that is as easy as it is delicious and pretty? I think they would be a great dessert for guests. Imagine their joy when you serve them an individual apple pie...inside of an apple!

I find recipes in all sorts of places: cookbooks, blogs, television, word of mouth...and sometimes even emails from my husband! But as long as they are yummy I don't care where they come from!

Apple Pie Baked Apples  
5 Granny Smith Apples, make sure 4 can stand on their own
1/4 c. white sugar, plus a little extra for top
1 TBS brown sugar
1 TBS cinnamon, plus a little extra for top
1 refrigerated pie crust, cut into 1/4" strips

Preheat oven to 375. Cut tops off of 4 apples and discard. The 5th apple, peel, core and chop very thin. Set aside. Using a melon scoop, hollow out 4 apples and add to other chopped apple. Be careful not to puncture outside, leaving about 1/2" interior. Add sugars and cinnamon to chopped apple. Mix well. Spoon apple mixture into 4 apples. Top each with a lattice pattern of 5 strips of dough. Press gently to adhere. Sprinkle with cinnamon and sugar. Place in a 8x8 baking dish. Cover with foil and bake 20 minutes. Remove foil and bake an additional 25 minutes until golden brown.
*NOTE* Sometimes an additional (6th) apple is needed to be chopped to obtain enough filling. I had more than enough with 5. Also, a couple of mine "oozed" a little during baking causing the apples to split on the side. No problem...they are still delicious!
