Ok, so here is another confession. I hate breakfast, at breakfast time:) Yep, I want it to be at least 10am or later before I have my eggs, bacon, toast, omelet, French toast, etc. So I guess you could say I'm just a bigger fan of brunch; and of course there is always breakfast for dinner- one of our favorites. And I'm not alone in this. Adam is kind of in the same boat, and we've passed this onto Alex. None of us are really into having anything big for our first meal of the day. In face, Adam nor I eat breakfast on a regular basis, and our son only does b/c I make him. (I can't say much, my mom was happy to get me to drink a glass of milk in the morning before school). So for Alex, on school mornings, it's usually a breakfast bar, Pop Tart, yogurt, granola bar, etc and some juice or milk. I figure he's getting something in this stomach and since he takes 8, yes I said 8, vitamins a day plus eats more than enough at every other meal, I don't worry too much. On the weekends, he adds a little variety and does cereal, oatmeal, cinnamon rolls, or a big treat is for him and his dad to go out for "guy breakfast". And sometimes on the weekends I try to find special treats for make for us to enjoy as a family, at the time of our choosing:) That is what this will be used for; and it comes to me from my cousin Tricia over at
Recipe Roundup. She actually gave it to me months ago, but it got up and walked out of this house (ok, so I lost it), but she was kind enough to give it to me again. The best part? It can be made ahead and waiting on you when you're half asleep!! Rather it be breakfast, brunch, lunch or dinner, I think this will be perfect w/ some milk and fresh fruit!
Baked Oatmeal
1/2 c. vegetable oil
1/4 c. brown sugar
2 eggs
1 c. milk
1/2 tsp salt
1 TBS baking powder
3 c. quick cooking oats
1/2 c. raisins
1/2 tsp cinnamon
Beat together oil and sugar. Mix in eggs, milk, salt, cinnamon, baking powder and oats. Refrigerate overnight. When ready to bake, preheat oven to 350 and bake for 35 minutes or until firm.
