It's Turning Into A Weekly Thing

Meal ruts are something that haunts us all. But I'm here to tell you they aren't all bad. Sometimes you can fall into a rut that actually lets you explore new things or rediscover old loves. This recipe is a perfect example of just that.

During the summer months, one of my favorite things to plan for suppers is a tasty, light, but still filling sandwich. Something easy for me after I've spent a hot day in the sun, but will still satisfy my boys when they are starving. See, this time of year, they both wait until after Taekwondo to eat supper, so it's not until about 8pm. I don't mind. I can't blame them. Who wants to eat at 4:30 when it's still 90 degrees outside and then go do a hard work out for 2 hours? Not me. It wouldn't be pretty. 

But while I don't mind if they wait until they get home to eat (And I usually wait to eat with them) I don't want huge meals to be sitting in our stomachs just a few hours later when we head to bed. So simple sandwiches with simple sides that are refreshing and delicious are perfect. So, about once a week now I'm serving up some version of a "salad sandwich." I've been through my Tuna Salad and my Lemon Basil Chicken Salad. And next up, is a classic that I've actually been making for years, and is time to bring back to EMM. (After all, the last time I blogged this, only my mom was reading...ha ha) 

Serve it on toast, croissants, buns, bread, rolls, with crackers...any way you want. It's going to be simple and yummy every. single. time. If you prefer white meat, go ahead and use boneless chicken breasts or tenderloins, but I have to admit I think the dark meat gives it a richer flavor. But I'm never going to know if you use white, so go ahead. And if you've never made chicken salad with roasted chicken, expect to be floored!! It stays moist, juicy and oh so flavorful. 

If you're looking for a light summer supper, a great weekend brunch dish, or even an idea for your next picnic, jot this one down and pick up some chicken on sale this week! 

Apple Pecan Chicken Salad
 1 1/2 lbs. boneless chicken thighs, any fat trimmed away
2 red delicious apples, cored and diced
1 c. chopped pecans
3 ribs celery, diced
3/4 c. mayo
1 TBS lemon juice
Salt and Pepper to taste
Olive Oil

Preheat oven to 350. Coat chicken with olive oil, salt and pepper. Place in baking sheet and roast for 30-45 minutes until juices run clear. Remove and allow to cool for a few minutes. Shred with 2 forks, or using stand mixer. 

When chicken is completely cool, add apple, pecans, and celery. Mix well. In a small bowl whisk together mayo, lemon juice, salt and pepper. Add to chicken mixture. Stir well. Chill at least an hour before serving. I like to serve this on some crusty dinner rolls. Cut each roll on 3 sides, forming a pocket. Spoon chicken salad into pocket. For parties, serve salad and rolls separately.

Soul Food Saturday


Especially in the middle of summer you just want a sweet treat right now. As in mix it up and eat it, am I right? This one is just that. Some yummy chocolate and crunchy granola in a cup just for you! Sound good? Grab a spoon, it's time for dessert! 

Quick Pudding Parfaits 
2 small boxes chocolate pudding 
4 c. Half and half
4 c. Granola

In a medium bowl add pudding and milk. Mix to combine, until begins to thicken. Cover top of pudding with cling wrap to prevent skin from forming.(Directly on top) Refrigerate until set, approximately 5 minutes. Remove from chilling, remove cling wrap and stir to combine. Add approx. 1/4 c. of pudding to bottom of cup, then 1/4 c. of granola. Repeat with pudding, more granola, and final layer of pudding. Sprinkle top with granola. Repeat with remaining pudding and granola. 

Makes 4 very satisfying dessert cups. Use up the last of your granola and get creative with dried fruit or even whipped topping! Enjoy!

Real Southern Food with South Your Mouth Day 2 {A Review}

If you follow me on Facebook or Instagram you might have caught my photos of our picnic last week on Independence Day. Picnics are a long standing family tradition during the summer months, and this year's 4th of July one also included a little bit of work for me. 

Work because I knew it would be the perfect time for me to try a second recipe from the new fabulous cookbook I introduced you to Wednesday, from my foodie friend Mandy over at South Your Mouth

Working on the holiday isn't that bad when it includes something yummy to eat! (The only downside is taking the time to get the perfect photo before you load up the picnic basket.) I usually include a side salad of some sort for all our picnics....potato...macaroni...something along those lines, so I knew this recipe would fit right in. After all, it has the word picnic right in the title! 

To be honest with you this would be also be a fabulous summer time lunch (It makes a ton, so just keep it in the fridge all week long!) or even a light supper for those nights when you are super busy and it's too hot to even think about anything heavy and complicated. 

Filled with fresh veggies and zesty flavor, it's sure to please each and every time you serve it up, no matter what the occasion. And be sure to click on the link below to see the great ideas Mandy has for switching out ingredients for even more options! 

I'm so happy summer picnic season is in full swing. If you haven't packed up your picnic basket in a while, I highly recommend it. It's an inexpensive, fun family activity that provides smiles galore and memories to last a lifetime!

Picnic Pasta Salad
1 lb. rotini pasta, uncooked*
Salt
2 medium cucumbers, peeled and chopped
1 pint grape tomatoes, halved
1 bunch green onions, chopped
1 (6 oz.) jar green olives, halved
2 tsp. minced garlic
1 1/3 c. Italian dressing

Cook pasta according to package directions for al dente in liberally salted water. Drain, rinse with cold water and drain well. Combine pasta with remaining ingredients and stir to combine. Refrigerate until ready to serve. *NOTE* I used extra large elbows because they were on sale for $.49!! I also added salt and pepper to taste, and some dried parsley for color.

Real Southern Food with South Your Mouth Day 1 {A Review)

I am so excited to not only be bringing you a terrific recipe today, but also sharing with you a fantastic new cookbook from one of my favorite ladies, and a fabulous foodie friend! And if you haven't met her yet, I am so honored to be the one to introduce you to her!

Mandy from South Your Mouth is one of the funniest people I've ever met; even though we've never met in person! Yes, she is also one of those sweet, big hearted, people that you feel like you've known all your life. And even though we've never stepped into the same room with one another, I feel like I know her through her story telling and the friendship we've developed over food and blogging.

If you aren't already a fan of her blog, South Your Mouth, you need to be! Now! (Just click that link and head on over!) Her food is delicious and she always has something hilarious about her own life to share. In fact, as much as I love her yummy recipes, her humor and story telling are what keep me coming back for seconds! 

And now. Mandy has her very own South Your Mouth cookbook! I could not be more excited for her! Inside you will find some of the fabulous recipes from her blog, plus so much more! 



Take it from me, each page looks and sounds more scrumptious than the last. Thumbing through it, I had trouble deciding which recipes to try first. I can assure you many, many pages are marked for future cooking. But the minute I saw this I knew it would be first. Why? Well, one, we were already having potatoes that night...I just didn't know what kind. Two, we are tater loving people. We've never met one we didn't like. Three, they were simple and easy...exactly what I needed after a busy day! 

These come out flavorful, crispy, but buttery tender and oh so good! They are the perfect side dish to any meal and can easily be made for a few people or a crowd. Great for a family dinner, cookout or pot luck...you will find yourself turning to this recipe again and again. 

I'm so happy for my foodie friend and wish her nothing but success with this new venture. I know she won't need it though. Her food, and more importantly, her personality speak for themselves, and she is going to be a huge hit with every single person that is lucky enough to set eyes on this cookbook. Oh, and speaking of lucky, I have one to give away too!! Just scroll down after the recipe to see how to enter!

Garlic and Rosemary Roasted Potatoes
4-5 medium potatoes, about 2 lbs.
2 TBS olive oil
1 TBS minced rosemary
4 cloves garlic, minced, or 1 tsp. garlic powder
1 tsp. salt
1/2 tsp. paprika
1/2 tsp. pepper
1/4 tsp. onion powder

Wash potatoes and cut into wedges (8-10 wedges each depending on size.) Toss thoroughly with olive oil and remaining ingredients. Spray large baking sheet with nonstick spray. Arrange potatoes so that each wedge is laying flat on pan. Bake at 400 for 20 minutes then turn potatoes with a spatula. Cook for an additional 12-15 minutes or until golden brown. (Reduce cooking times a little if using small potatoes.) *NOTE* I actually used red potatoes, quartered, because it's what I had on hand. I also used 1/2 TBS dried rosemary because we prefer it to fresh.
