32 Days And Counting

Why the countdown you ask? Well, on August 20th the day Monkey is dreading (and truthfully me too) will be here...The First Day of School. Now to be honest, as of right now Alex is not looking forward to it, but he loves school so much that by the time that morning rolls around he is always super excited and ready to see his friends, learn and have another great year. But between now and then I am constantly on the lookout for ideas both for school lunches and/or after school snacks. This is an idea I saw on Pinterest and I knew it would be perfect for my Monkey any day after school when at 3:30pm he declares "Mommy, I'm starving!!" After all, what's more of a match made in heaven than a monkey and bananas? I love finding new, fun and easy things to treat him with after a long day of reading, writing and arithmetic!

Banana Bites
Banana
Peanut Butter
Crisped Rice Cereal
Chocolate Syrup, optional

Cut each banana into 3-4 small sections. With a butter knife, spread peanut butter on all sides. Pour rice cereal into a small dish. Roll each banana section in cereal, covering it. Drizzle chocolate syrup over top. Chill for about 10 minutes to set.

I'm So Addicted...An Award

For many people who read this blog they probably don't know just how much work and effort goes into it. And that's okay because before I became a blogger I had no clue. But for my fellow bloggers, they know exactly what it takes to do what I (and they) do every day. They understand these are more than just words. This is my work of art. My blood, sweat and tears laid out for the world to see; and I share a little piece of myself with each post. So to be awarded something from another blogger that sums that all up brings a smile to my face and joy to my soul!! My dear friend Bobbi from Bobbi's Kozy Kitchen was so kind to give me this award, and I'm so honored by it! This blogging community is truly a family, and we are all better because of each other; and we are all indeed addicted to bringing our readers the very best we can! Thanks, Bobbi!! I can't wait to pass this on to more of our family!

I started blogging in 2010 at the suggestion of family and friends who loved my recipes and said "You should share these with more than just us." Everyday Mom's Meals was created as a hobby and something I did once in a while. Then in May 2011 I got the opportunity to expand the site and make it into so much more. That started with the Facebook Fan Page. Once there, there was no stopping it! It's been a whirlwind 12 months, and I'm so thankful for every opportunity that has been brought my way. I love what I do!!
And I can't imagine my life without this blogging world! Thank you to all of you who log on every day and allow me into your lives for just a moment!

Don't Tell Monkey

About once a week, or maybe every other week, I let Alex pick an entire meal. Now for a kid who will eat anything I put in front of him, it's not always guaranteed he's going to pick something other kids would. He's got such a varied palate that he can come up with some adult worthy meals. Heck, he's even been known to request my Pan Roasted Brussels Sprouts. However, he is only 7 and sometimes that child appetite comes shining through. The most recent example of this is when his choice was none other than Hamburger Helper. Now I will admit, I've made this boxed meal before, how else would he know he likes it??!! And I think there is nothing wrong with using it on a busy night when you've got hungry mouths to feed and no time to do so. But this time I just wasn't in the mood, so I decided to do a homemade version of it...and he never knew the difference! He gobbled up every last bite just like if it had come straight from the box! And the funniest part? He even proclaimed "Mommy you should blog this", thinking he was being silly telling me to blog something prepackaged. Little did he know that was exactly what I had planned all along! So it's our little secret, okay??!!

Cheeseburger Macaroni From Kevin & Amanda
1 lb. ground beef
1 pkg. taco seasoning
1 small can diced tomatoes
2 c. beef broth
1 c. elbow macaroni ( I like jumbo sized)
2 TBS butter
2 TBS flour
3/4 c milk
1 c. cheddar cheese, shredded
1/2 tsp salt
1/2 tsp pepper

In a medium skillet, brown ground beef. Drain if necessary. Stir in taco seasoning, tomatoes, broth and macaroni. Heat to boiling. Reduce heat and cover pan. Simmer 12-14 minutes until macaroni is tender. Melt the butter in a saucepan. Whisk in the flour and cook for 5 minutes until light brown.. Whisk in the milk and bring to a boil. Whisk until smooth and thickened. Remove from heat and stir in the cheese until melted. Add the salt and pepper to the cheese sauce. Pour the cheese sauce over the hamburger mixture. Stir gently to combine. Garnish with parsley if desired.

Cracker Inspiration

I know I can't be the only person this has ever happened to. You take a bite of something new and you immediately think "I have to eat this as much as possible and find as many ways to use it as I can." That is how foods become obsessions! This is exactly what I experienced a couple weeks ago when I bit into the newest flavor of Triscuit crackers~ Dill, Sea Salt and Olive Oil. If you love dill, these are the crackers for you. They are bursting with dill flavor! You can actually see it baked right into the cracker. It was love at first taste for me. And while I was looking at the box I saw a couple suggestions for ways to use them in appetizers. Well, that makes sense b/c I already use them in an appetizer I shared with you at Thanksgiving time, Turkey Bites, that were instantly a favorite in this house. So I immediately started to plan how I could use these ones too. I can always use new appetizer ideas, especially when they involve something like a cracker b/c it makes them so easy to put together, even at the last minute! Calling all fellow dill lovers, you've got to see these!

Dill Cucumber Bites
Triscuit Crackers~ Dill, Sea Salt and Olive Oil
1 medium cucumber, only peel 1 strip from each side, leaving rest of skin
Chive Cream Cheese, softened
Dill Weed

Slice cucumber very thin. Spread cream cheese onto crackers. Place1 cucumber on each cracker. Sprinkle with dill weed. Chill until serving.

Church Supper #47

Happy Sunday everyone! Did you have a great week? We've been busy since returning from vacation, and it doesn't look like it's going to slow down any time soon! This week we are gearing up for a birthday in our house. Mr. Everyday will be turning 38 Saturday the 21st, so of course the celebrating will be lasting all week long.
