It's Like.....

An oasis in your mouth! Wondering what I'm talking about? Lemon. I love anything w/ lemon in it! I've shared my love of citrus w/ you before and I'm admitting to it once again. In the dog days of summer I don't think there is anything more refreshing than eating/drinking something w/ lemon in it. When I'm sweltering at a fair, what am I drinking? Lemonade shake-ups of course. (Notice the plural?? Yeah, I'm drinking 4-5!!). If I order iced tea w/ a meal, what's in it? A bid wedge of lemon. If I my hands are gross and I need hand sanitizer, what scent is it? Lemon of course! :-) I'm obsessed, I know and I'm completely okay w/ that. It's cool, clean and makes you feel 10 degrees cooler instantly. Or at least it does me. So when it was time for an easy dessert on a hot Sunday afternoon I turned to my trusty lemon tree once again. Okay, so that part is a lie. We don't have a lemon tree, but OH how I wish we did! I had stumbled upon this on Food.com and saved it for the perfect day--95 degrees w/ 567% humidity! It's light, creamy and so nice when it's too hot for anything heavy. I don't eating things that "weigh" me down when it's so warm and this is like a puff of air, it's so light! So if you need a dessert that is refreshing, yummy and will disappear in no time, this is for you!

Lemon Mousse 
1 (21 oz.) can lemon pie filling
3 c. heavy whipping cream
1 tsp vanilla

In a large bowl, add pie filling, cream and vanilla. With an electric mixer, beat until light and fluffy. If you desire a more deep yellow color, you can add a drop or 2 of food coloring.  Garnish w/ some grated lemon zest.
