Perfect Match

Some things were just meant to be paired up. Peanut butter and jelly, French fries and ketchup, Cheese and crackers,  Adam and Krista....lol. It is the way the universe wanted it. And the match made in heaven I am talking about today is beef and horseradish. Now I have not always known about his perfect little pair. It was only a few years ago that I tried Prime Rib for the first time and w/ it came a creamy horseradish dipping sauce. Well, while I didn't much enjoy the way the meat itself was prepared, the sauce and I were instant friends. Cool, yet a little spicy, creamy, tangy all of them worked together to create a harmony in my mouth. Since then, whenever I make a beef roast at home (no, this everyday mom does not prepare prime rib) I make a version of that sauce that only enhances the juicy, tender, deliciousness of the meat. Even if you don't like horseradish, or think maybe it's a little too "hot" for you, try this. I am not a big heat girl, and this I can take. It has just the right amount in it and truly adds another layer of flavor to the beef. It is also really good the next day to spread on bread and make a cold beef sandwich. See, when the stars line up and it's meant to be, there is no stopping it!

Horseradish Cream Sauce Adapted from Allrecipes

2 TBS prepared horseradish
1/2 c. sour cream
3 TBS mayonnaise
1 tsp dry mustard
1 TBS cider vinegar
Salt and pepper to taste

Whisk together in a bowl and chill well.

  1. You are so right. There is nothing better than beef, rare, sliced just perfectly with creamy hoarseradish sauce. My mouth is watering thinking about it. Wonderful looking recipe. Come over and visit today. We have a great Southern recipe.

  4. Beef and horseradish is a perfect combination. Rib roast is my traditional Christmas dinner. I usually buy prepared horseradish cream but I will definitely give yours a try. Thanks for sharing!
