Okay mayonnaise lovers, when I say the word "aioli" there is a good chance you already know what I'm talking about. But I'm guessing a few of you, rather you are a mayo fan or not, have no idea what aioli is. Some of you might have heard it on some of your favorite cooking shows, or maybe on the menu at a favorite restaurant. Heck, maybe if you've even had it, and know you love the flavor, but have no idea how to make it at home or use it in your favorite recipes. Now Red Gold Tomatoes wants to change all of that!
For those of you who don't know what aioli is, I bet a few of you have had it and not even realized it! Have you had a great sandwich with a flavorful mayo-like spread on top, or maybe a crab cake with a creamy dipping sauce? Well, that is aioli!!
Aioli is a wonderful, flavorful mayo-like spread that can be smeared on a sandwich, used as a dip or as a topping on fish tacos. It is so versatile and delicious, that regardless of how it s used, you will always be adding more depth of flavor!
The great folks at Red Gold are hoping to introduce more home cooks to aioli spreads using tomatoes for sandwiches, dips, toppings and other recipes. The minute I saw this recipe I knew it was going to be the first I wanted to treat my family to. We love at home pizza parties, and I'm always looking for new recipes to jazz up our routine! This makes a fantastic appetizer, light lunch or even simple summer supper. I served it with a simple salad on the side and it made a fun, easy and yummy meal we all loved!

Flatbread Veggie Pizza with Garlic Aioli From Red Gold
4 flatbreads
1 green pepper, finely chopped
1 (14 oz.) can Red Gold Petite Diced Tomatoes with Garlic and Olive Oil
2 c. shredded mozzarella cheese
1/2 c. mayo
Sliced button mushrooms (my addition)
Preheat oven to 425. In a medium bowl combine the diced tomatoes and mayo. This makes Garlic Aioli! Spread a thin layer of aioli on each flatbread. Sprinkle with green pepper and mushrooms. Top with cheese. Bake for 12-15 minutes or until cheese is melted and golden brown. Slice before serving.
