Another Picnic Must Have

I hope you won't get bored w/ me for posting yet another salad. What can I say? We love a good salad, and ones w/ potatoes are at the top of that list. Like I said when I posted the Garlic Potato Salad I have a lot of different ones I make, some of which I've already shared. This is one I've made quite a bit--hence the reason it was in the back of my recipe box--I have it memorized by now:) This one caught my attention b/c of the dill. I'm a dill freak! Pickles, chips, dips, sandwiches, scrambled eggs, if I think I can, I'll put dill in it. I use dill weed (which is what this recipe calls for) b/c I can keep it in the cupboard and have it on hand when I get a craving. I know a lot of people prefer fresh herbs, and for some things I will make the special purchase, but most of the time, it's easier and more economical for me to use the dried form. (Remember, 1 TBS of fresh = 1 tsp. dried b/c the flavor is more intense) So when I saw this, I believe in Taste of Home years ago, I grabbed my pen as fast as I could and copied it down. It makes a ton, so not only would it be perfect for a family Sunday picnic, but also for a potluck, family reunion, graduation party, 4th of July barbecue, etc. Summer is here people, get out there and fire up the grill, bust out the blender for cocktails and make up a huge batch of this!!

Cucumber Potato Salad

5 lbs. red potatoes
4 celery ribs, chopped
1 bunch green onions, chopped
2 TBS dill weed
2 tsp salt
2 c. mayo
1 16 oz. bottle cucumber ranch dressing

Boil potatoes about 20-25 minutes until tender. Drain and cool completely. Cut into cubes.

In a small bowl whisk mayo, dressing and dill weed until well blended. Add salt and mix well. Put diced potatoes in a large bowl. Add celery and onions. Pour dressing over potato mixture. Stir gently to coat. Cover and chill 6 hours before serving.

  1. Sounds good to me. I think it's too blasted hot for anything but salad...not so sure my hubby agrees though :( Funny thing, I've added a bunch of new recipe related pages & I see you're in FW...I'm in Busco ~ small world indeed!

  3. Love the idea of this but did not have cucumber ranch dressing...soooo, I added cucumbers instead and then threw in chunks of bacon (because I love cucumbers with bacon)...yummo! Thanks for the inspiration for my dinner tonight!!
