Autumn Snack

It's hard to believe the calendar reads October already. Where did summer go? Or better yet, where did September go? Wasn't it just Labor Day? I swear, time flies when you're having fun, and for us, more so when we are super busy like we have been lately. But since the calendar says it's so, I'll embrace it. See, for me September is still too close to summer to really be considered fall. Yes, I start to feel the chill in the air in the early morning, and I begin the transition to all things autumn, but when October hits, I go into high gear towards fall! Maybe it's because the first weekend of the month we always enjoy one of our favorite fall activities, The Apple Festival. Maybe it's because for our family the house has been decorated for Halloween since before Monkey's birthday (he always asks me to have it done for his special day, and I'm happy to do so). Or maybe it's simply because by October 1st I've finally come out of my end of summer denial and begin to embrace the next season. Whatever the reason is, for me, today is the first day of autumn. So in celebration of that, I've got a great fall inspired snack that your kids will love. These would be perfect for an after school snack, or a packed lunch, or even crumbled on top of some yogurt for a delicious and nutritious breakfast. Apples are something that scream "use us" in this beautiful season, and I'm happy to have found yet another way to oblige! Happy Autumn!!!

Baked Apple Chips
2 Red Delicious Apples, sliced very thin, seeds removed
1/2 TBS sugar
1/2 tsp. cinnamon

Preheat oven to 200. In a small bowl combine sugar and cinnamon. Mix well. On a lightly greased cooking sheet (or use parchment paper) place apple slices. Sprinkle with sugar mixture. Flip over and sprinkle other side. Bake for 1 hour. Carefully lift with a spatula. Continue baking for up to 3 hours until completely dried and crisp. Check every 45 minutes to ensure no burning. 
*NOTE* Mine took almost 4 hours. Depending on how much moisture your apples have and how thick the slices are, will effect cooking time.
