By now all of you know that I refer to Alex as "Monkey". But that is not the only nickname he has in our house. He is also referred to as Bubbie, or "Bub" for short, and for Adam, he will always be "Cubbie". I can't even remember how it started but I'm sure when he is 35 Adam will still be calling him his "Cubbie" or "Lil' Cub". Well, back when he was about 2, they started a Saturday morning tradition of going out for a diner breakfast and then running errands (which usually meant a couple errands and then trips to the toy store, hobby shop, video game store, etc.); also known as "Daddy and Cubbie Adventures". Not to mention, it gave Mommy a much needed break for a few hours to relax and enjoy some "me" time during the weekend. To this day, this tradition continues when our crazy lives allow it. And one of their favorite treats to eat at those diners was/is Corned Beef Hash. Or as Alex used to call is, "corn beesh hash"...after all he was only about 2 1/2 when he started eating it! So since we are sometimes just too darn busy for them to go out and enjoy their time together, I try to have some of their diner treats here at home, except for us, that means breakfast for supper. I've never hidden the fact we are big time fans of breakfast favorites for dinner meals. This way they can still get their "diner fix" even if they can't go out as much as they used to. They have said this is just as good as any they have had out and this way Mommy can get in on the fun too!
Corned Beef Hash
2-3 TBS butter
2-3 c. cooked corn beef, finely chopped
2-3 c. cooked potatoes, finely diced (diced can potatoes work well here too)
Salt and Pepper to taste
Heat butter in a large skillet over medium heat. In a large bowl, combine potatoes and corn beef. Layer in bottom of skillet and press down with spatula. Season w/ salt and pepper. Allow to cook 8-10 minutes until browned on one side. Do NOT mix or stir. Using a spatula, flip a small section to see how brown it is. If it has reached a deep brown crispy texture, continue to flip rest over and allow to cook on second side 5-6 minutes more. Drain on paper towels before serving. Serve w/ eggs and toast.
*NOTE* Be careful! This will spatter grease. I usually cover mine while browning on both sides even though most people say not to. I don't find it affects the browning and it saves a lot of mess!
