Yesterday I introduced you to my dear friend, Theresa and the wonderful world of
Tastefully Simple. I said you should come back today to see what dish I chose to make w/ their
Bayou Bourbon Glaze; and oh you will be so happy you did!!! I was super excited when I found this dish their
recipe suggestion section of their website. Not just b/c it looked so yummy, but also b/c it included black beans! We love black beans but I don't use them nearly enough. I don't really know why, but when I get the chance, our stomachs thank us. Included in the recipe there was a disclaimer that it tends to be
VERY spicy, so I decided to modify the recipe just a tad to accommodate for Alex and I. (That change in will be noted in the recipe). All of us LOVED this dish and there were NO leftovers. That's right, the 3 of us finished off the entire pan and didn't even fell guilty. Bayou Bourbon Chicken w/ Beans and Rice from Tastefully Simple
1/2 c. Bayou Bourbon Glaze
1 TBS Fiesta Party Mix Dip (I cut this to 1tsp)
15 oz. can black beans, rinsed and drained
14.5 oz petite diced tomatoes, undrained
1 c. uncooked instant white rice
4 frozen boneless chicken breasts (I used 1 package chicken tenders)
Combine first 5 ingredients, stir to blend. Place frozen chicken in a greased 9x13 pan. Top w/ mixture. Cover. Baked@ 375 for 1 hour.

ReplyDeleteSo far I have only tried Bacon Bacon; but that Bourbon Glaze makes my mouth water. I will definitely be checking out more of their products.
