 Hi all! My name is Vanessa and I’m a coupon loving chick! I began couponing as a way to save some money on my weekly food expenses and it has quickly grown into a way of life for me. I used to spend a minimum of $100 a week eating breakfast, lunch, and dinner on the street for myself only- and that was just Monday – Friday! I would always wonder where my money would go & think “It’s not like I’m shopping for books and shoes {my two other obsessions} every week! Where is it all going?!” It finally dawned on me that it was all the eating out every day {looking back on it, you’d think it would have been obvious to me huh? lol}. Once I started couponing and really immersing myself in it, I began seeing incredible savings and watched my stockpile grow by the week. I am now able to save money on a weekly basis, still enjoy life out on the weekends {Frugally, of course. You’d be amazed at all you can do for next to nothing when you really try}, and I can plan my future! It just makes me feel all warm and fuzzy!

Spanish Paella
Paella is an internationally-known rice dish from Spain. It originated from a region called “Valencia” in eastern Spain. Paella is made using just about any kind of ingredient that goes well with rice. There are as many versions of paella as there are cooks. It may contain chicken, pork, shellfish, fish, eel, squid, beans, peas, artichokes or peppers. Saffron, the spice that also turns the rice a wonderful golden color is an essential part of the dish.
This is our version of “Spanish Paella.” We hope you love this delicious seafood dish, as much as we do.
Ingredients

- 4 cups Valencia short grain rice (any brand)
- 8 cups fish broth
- 6-8 king-sized prawns/langoustines
- 8 mussels
-          8 clams
- 2 pounds fresh shrimp
- 1 large can of sweet peas (can be substituted with frozen peas)
- 2 tomatoes, skinned and chopped
-          2 large tomatoes for garnish (if desired)
- 2 cloves garlic, minced
- 2 envelopes Sazón Goya seasoning with Coriander and Annatto
-          2 envelopes Sazón Goya seasoning with Saffron (Can be substituted with 3 strands of fresh saffron)
-          1 cup drained Goya Fancy Pimientos for garnish
-          1/2  teaspoon salt
-          ¼ teaspoon black pepper
-          1 large finely chopped onion
-          1 large finely chopped green bell pepper (cut a few slices and set aside for garnish)
-          2-4 lemons for garnish
- ¼ cup Spanish Olive Oil for frying

Directions

- Sauté garlic with Spanish Olive Oil in paella-type heavy pan.
 -  Add tomatoes, onion, bell pepper, shrimp, seasoning and stir
 -  Saute for a few minutes, remove shrimp and set aside
 - Add rice, peas, and fish broth
 -  Simmer for approximately 20 minutes.
-          Add prawns, mussels, clams and seasoned shrimp before rice is fully cooked
- Cover paella with a lid.
- Poach seafood for a few minutes until fully cooked.
- Garnish with lemon quarters around edge of pan or large serving dish, halved tomatoes and green peppers (as indicated in picture, for added color). Add diced, drained pimientos.
