Thanks, Mr. Everyday

I have to admit, my boys treat me pretty well when it comes time to give their favorite Everyday Mom gifts :) Christmas, birthday, Mother's Day, Valentine's Day....they always make me feel pretty special. This year, part of my Christmas present was actually one of those gifts you know about, but are so excited to get you don't even care! When I found out Gooseberry Patch was starting their annual 80% off clearance 2 days before Christmas, I was so excited; but the budget was a little tight from all the gift buying. Alas, my husband saved the day. He said "I still had one more thing to get you, but why don't you order what you want, and that can just be part of your Christmas." YAY!!! Off to the laptop I went....and oh did I find some great deals! One of those being their Dinners On A Dime cookbook. For this mom, making a yummy dinner while staying on that weekly grocery budget is always a challenge. Well, this book is packed full of great ideas for feeding a family while not breaking the bank. The first recipe I wanted to try caught my eye b/c of the use of "Ramen" noodles. My husband is a Ramen noodle connoisseur. He loves them! Don't get me wrong, I don't mind them, and when I was in college I ate a lot of them, but now...not so much. But I thought using them as an ingredient in a cheap meal was pretty genius. I will share w/ you the original recipe and my version, which only has a couple additions. This made a great meal, and just like the suggestion in the book, I served it w/ egg rolls for a full meal deal! Thanks honey, for my Christmas present, you've helped t make sure we eat well, and budget friendly, for years to come!

Curly Noodle Supper  from Dinners On A Dime, Submitted by Karen C. Glenview, IL
1 lb. ground beef
3 oz. pkg. beef flavored Ramen noodles, uncooked and divided
14.5 oz can stewed tomatoes, undrained
11 oz. can corn, drained

My Additions:
2-3 TBS teryaki sauce
2 green onions, chopped, reserve some for garnish

In a skillet over medium heat, brown beef w/ seasoning packet from noodles;drain. Break up noodles and stir into beef. Add tomatoes w/ juice and corn. Reduce heat to low. Cover and simmer for 10 minutes. Add teryaki and green onions. Cook 5-10 minutes more, stirring occasionally. Garnish w/ extra green onions and serve w/ egg rolls.
