Mr. Pete's Casserole {Review & Giveaway}

I promised you some exciting giveaways on EMM for 2012, and today I'm bringing you the first one! We're starting w/ something every home cook can use...pantry staples. Those things you always have on hand that can save your brain from hurting trying to think of things to make for dinner. What's easier than a casserole? I've always said mom's (and dad's too) love casseroles. You throw a bunch of things into a pan, some oven time and supper is ready! When I saw this in the latest issue of Simple & Delicious magazine, I was so excited. One, b/c it looked absolutely 100% tasty, and two, I knew it was the perfect dish to try one of the 2 new products I was waiting to review. Adam's family has been using another Cajun spice for years and they put it on everything from hamburgers, to baked potatoes. (Out of respect for this other company, I will not mention the brand by name. But if you live in the northern part of the US, I will give you a hint....It's usually the only one you can find in your grocery store.) So I was extra psyched to try a new Cajun Seasoning, brought to me, and now you, from our friends at Mr. Pete's Cajun Spices.


Mr. Pete's is a family owned operation that operates out of Houma, Louisana. They have been producing and selling Cajun seasonings since 2006. I love using "homemade" products, especially those from family-owned businesses. Their Cajun spice is definitely something I'll continue to have in my pantry for every day seasoning purposes. It has great flavor, and if I do say so, better flavor than the nationally known one we usually buy, and was PERFECT in this casserole.


Mr. Pets offers a variety of products (come back tomorrow to see what I did w/ another one of them) to make your next meal as authentically Cajun as possible!

Cajun Beef Casserole from Simple & Delicious
1 pkg. (8.5oz.) corn muffin/bread mix
1 lb. ground beef
2 14.5 cans diced tomatoes, drained
2 c. frozen mixed veggies, thawed
1 6 oz. can tomato paste
1-2 tsp Cajun seasoning
1 c. shredded cheddar cheese
2 green onions, chopped (I used 4)

Prepare corn bread mix according to package directions. Spread into a greased 11x7 baking dish.Cook beef in a large skillet over medium heat until no longer pink. Drain. Add tomatoes, vegetables, tomato paste and seasoning. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Pour over top of batter. Sprinkle w/ cheese. Bake uncovered @ 350 for 25-30 minutes until golden brown. Sprinkle w/ onions.
*NOTE* Adam thought the tomato flavor was a little over powering. So next time I will leave out the tomato paste.

  42. I do a lot of cooking and I would say the spice I could not cook without would be sea salt and black peppercorn..
    The herb of choice is cilantro.
