Porcupine Meatballs
2 lbs. ground beef
2/3 c. instant white rice
2 cans tomato soup
2 cans water
2 eggs, beaten
Salt and Pepper to taste
Oil for browning
In a large bowl mix ground beef, eggs, rice and salt and pepper. Mix well using hands. Form into meatballs, a little smaller than tennis ball size. In a large skillet, heat oil over medium heat. Brown meatballs on all sides. Remove and drain on paper towels. In a large pot over medium heat, combine soup and water. Bring to a boil and then reduce to simmer. Place meatballs in soup mixture and simmer until cooked through, about an hour. Serve w/ tomato soup sauce on top.

You think "porcupine meatballs" sounds gross, you should hear what my dad always called these! He would always ask for them by the gross name and my mom hated it!
ReplyDeleteLOL on the previous comment. I remember these meatballs from school lunches back in Maine in the last century - a long, long time ago.
ReplyDeleteI asked my mother if she'd make them and my father said, "anyone who'd eat that would eat turds with a rusty spoon." He said it with a laugh but he never liked many things in a sauce.
You'd think that would turn me off them but I just ignored him and my mother made them for me and he ate them. I don't remember if he grumbled or not.
I don't think I've eated a porcupine for 30 years. I think it's high time! Thanks for the reminder.
I haven't had these since I was a kid! Thanks for reminding me of them-I can't wait to retry them as an adult!
