Favorite By Marriage

For those of you who are married, when you entered into your new family were there recipes and dishes you got introduced to you had never had before then? I think it's a pretty common occurrence when you have two people from different backgrounds coming together and new families forming. For me, when I became a Marshall, the one dish that stands out in my mind as being something I had to ask "what is that" when told what we were having for supper one night at my in laws, was Porcupine Meatballs. Yes, I know they sound like something you would make after scraping up roadkill off the highway, but I assure you they are NOT!!! The best way I can describe these for those who have never heard of them, is to think of the inside to a stuffed pepper. The first time I tasted them that description was the first thing that came to my mind. They are so yummy, and have now become a favorite of not only mine, but Alex as well. It's so nice to know food that our family has loved for years, will be around for the next Marshall generation....and the next.....and the next......

Porcupine Meatballs
2 lbs. ground beef
2/3 c. instant white rice
2 cans tomato soup
2 cans water
2 eggs, beaten
Salt and Pepper to taste
Oil for browning

In a large bowl mix ground beef, eggs, rice and salt and pepper. Mix well using hands. Form into meatballs, a little smaller than tennis ball size. In a large skillet, heat oil over medium heat. Brown meatballs on all sides. Remove and drain on paper towels. In a large pot over medium heat, combine soup and water. Bring to a boil and then reduce to simmer. Place meatballs in soup mixture and simmer until cooked through, about an hour. Serve w/ tomato soup sauce on top.

  1. You think "porcupine meatballs" sounds gross, you should hear what my dad always called these! He would always ask for them by the gross name and my mom hated it!

  2. LOL on the previous comment. I remember these meatballs from school lunches back in Maine in the last century - a long, long time ago.

    I asked my mother if she'd make them and my father said, "anyone who'd eat that would eat turds with a rusty spoon." He said it with a laugh but he never liked many things in a sauce.

    You'd think that would turn me off them but I just ignored him and my mother made them for me and he ate them. I don't remember if he grumbled or not.

    I don't think I've eated a porcupine for 30 years. I think it's high time! Thanks for the reminder.
