Elegant Yet Simple

Today's recipe is yet another delicious lesson I learned at the Taste of Home cooking show. (I told you I walked away w/ a arsenal full of goodies to share w/ you!) This dish is something that is so pretty, so shall we say fancy, your family will think you worked all day to put it on the table. When in reality, you can come home from work, tired to the bone, and in about a half hour serve a beautiful dish you can be proud of. Plus, if you have a dinner party where you need to impress, but don't want to spend a lot of money, this would be perfect! It's affordable while still being guest worthy. I was lucky enough to receive a free sample of the Dijon mustard I used in the recipe, but I'm sure any would taste just as well. While we were showed how to prepare it in a skillet, the magazine we were given offered a baked version, and I chose to do that. Baking the chicken in the sauce gives it a slight "crust" on top, but enough extra sauce to keep it creamy too. (See below). This is definitely something I will continue to make for my family and keep in mind the next time guests are coming to dinner!

Chicken with Creamy Dijon Herb Sauce
1/2 c. chicken broth
6 TBS French's Dijon Mustard w/ Chardonnay
1/3 c. cream cheese, softened
2 TBS minced chives
4 boneless chicken breasts
1 tsp minced garlic

Mix broth, cream cheese, mustard, chives and garlic together until well combined. Place chicken in a greased 9x13 pan. Pour sauce on top. Bake at 375 for 30 minutes or until cooked through. Place chicken on a serving dish. In bottom of the baking plan, add a splash of water to loosen up extra sauce. Stir until comes back to a creamy texture. Spoon over chicken and garnish w/ extra chives.
