Classic Feasty {Review and Giveaway}

Do you remember the week before Christmas? For many of us, I'm sure it's all a blur of wrapping paper, trips to the mall, cookies out of the oven and fudge on our lips :) Well, that was the weekend Debra was my guest for Weekend Company and shared her awesome recipe for Hot & Crunchy Chicken (which is at the top of my make in 2012 list!). At that time she shared w/ us that she also has a cookbook, "Let The Feasty Begin". After seeing some of the recipes on her website and blog I knew EMM readers would love this cookbook, so I asked if she would like to team up for a giveaway, and she so kindly agreed! (Scroll to bottom for details) Yay!!! I love giving my readers true gems from the cooking world. Upon receiving mine, I was only into the breakfast section before finding the recipe I wanted to make for the review. This is something my mom used to make a lot when I was growing up and it was a treat every time! But here is the funny part---we always had it for dinner!! In fact, when I found it in Debra's cookbook, I backtracked to see if I was indeed in the breakfast section! I had never heard of having it for the breakfast meal, but hey, if I can eat scrambled eggs and pancakes for supper, why not??!!! Debra states in her book her family enjoys this over biscuits straight from the oven, but my mom always served it over toast, so I chose to stick w/ what mama taught me! Now here is the other ironic part. My mom always used the "boil in a bag" version, never home made. So truthfully, I had no idea just how easy this would be until I went to do it. It turned out perfect the first time and was not only like I remember from when I was a kid, but even better! Rather you choose to eat it at 7am or 7 pm, I guarantee this will be a hit in your house too!!! "This recipe will make your fat cells sing!!!" ~ Debra Freeman

Creamed Chipped Beef  from "Let The Feasty Begin"
1 4oz package chipped beef (I bought 1 large jar Armour brand)
1/4 c. unsalted butter
1/4 c. flour
2 c. milk

Cut beef into bite size pieces and set aside. In a Dutch oven pot, melt butter over medium heat. Add flour and mix well w/ a whisk. Gradually add milk stirring constantly until mixture almost comes to a boil, add meat, reduce heat and stir together well. Let simmer until thickened. Serve immediately over toast or biscuits.
*NOTE* I added black pepper to taste.

    Must be an Indiana thing; my mom always made this for dinner too. She called it Dried Beef on Toast. She bought the dried beef from a butcher's shop and she served it with crumbled up egg yolks. It was always one of my favorite meals.

  5. My mom used to make this for us frequently too... always for dinner and always over toast. My dad had another not so nice name for it that he learned while in the service many years ago.... S##T on a shingle.
