If At First....

I don't need to tell you what comes next. All of us that spend significant amounts of time in the kitchen are basically playing a never ending game of trial and error. Some recipes you try turn out terrific the first time w/o fail. Others.....well, let's just say they may take a 2nd try. (Or let's be truly honest...a 3rd or 4th) Luckily this one only took two tries, and after the 1st I knew exactly what I had done wrong, started over, corrected it and tah-dah complete success. Thank goodness there were only 3 ingredients involved, and they were all staples in my pantry and fridge. Ha! Two years ago our Aunt Carla texted me one day and asked if she could drop something yummy off for us. "You even have to ask?" Lol What she treated us w/ that rainy autumn day (my memory is very good, especially when it comes to food) was home made caramel sauce, a new recipe she had tried. In love dipping apples, and have bought the stuff in the produce section many times, and while it's good, the second I put a bite of hers in my mouth I was hooked. To the point that I would find myself eating spoonfuls of it every time I walked past the fridge. A few weeks ago I asked Aunt Carla for that recipe, but alas she didn't recall it, or where she had gotten it from. *Insert sad face here*. Well, I decided it was time for me to put my big girl pants on and try it on my own. Now I've heard from a few people, how hard making caramel sauce and caramel candy can be, so I was a little apprehensive. After doing some research online, I found an easy recipe on Simply Recipes with step by step instructions and photos. (To see these also, click here.) So I set off. And yep, the first time as soon as I was done I knew I had burned it. Adam tasted it, and he knew it too. The recipe had warned me of this, and I had followed the instructions exact, so I chalk it up to a little to high of heat, and beginners bad luck. I washed out the pan, grabbed some more ingredients and tried again. This time it worked! And beautifully I might add! It's not the exact same as we had two years ago, but it's darn close and very yummy! So if you have a recipe that keeps eluding you, or is down right taunting you to try it again, get back in the kitchen and give it a go. You never know when it will all come together. Caramel Sauce from Simply Recipes


1 c. sugar
6 TBS butter
1/2 c. heavy cream

Pour sugar in a large, heavy bottomed stock pot, over medium heat. As soon as the sugar begins to melt, stir vigorously w/ a wooden spoon or whisk. When it starts to boil, STOP stirring. It should be a golden amber color. When all the sugar crystals have melted stir in butter quickly until melted. Remove from heat, count to 3 and slowly add in the cream while stirring. Mix to combine and let cool in pan for a few minutes. Transfer to another dish or jar to finish cooling. *BE CAREFUL* The pan will be extremely HOT. Refrigerate leftovers.
*NOTE* When you add the butter and the cream, the mixture will bubble up. Make sure your pan is large enough to accommodate this.

  1. I was just thinking about making caramel sauce for apple dippin, can't see the point in buying it if it's easy to make. I just forgot to get cream :(
