Last September Adam's mom hosted the Marshall Family reunion the same weekend his youngest brother Joel got married, to our now sister-in-law Charla. It was a crazy fun weekend filled w/ great memories and some awesome food. They were married at the lake on Sunday, but on Saturday we all gathered at my in-laws for a hog roast. I wanted to take something light yet delicious and wanted it to be looked at as a side dish, salad or a sweet, depending on the person eating it. (You know me and these dishes. I make a ton!) I can't even remember where I found the inspiration for this, but I do recall I added a little, took a little away, tweeked a few things until I came up w/ just what I was looking for. Well, it was a huge hit, especially w/ my brother-in-law, Duke. He made me write down the recipe on the spot and make sure my sister-in-law had it in hand before the day was over. It's so simple Alex could whip it up, but luckily so decedent your family or guests will have no idea it was made in about 5 minutes! Perfect for summer, I thought I needed to share it w/ you before barbecue, pool party and picnic season was over. (Insert tears here). A lot of you might even have the ingredients already on hand- so head to the fridge and pantry right now! I'm not kidding GO!! What are you waiting for?
Strawberry Cream Salad
1 can strawberry pie filling
1 20 oz can crushed pineapple
1 8 oz Cool Whip
1 14 oz can sweetened condensed milk
2-3 fresh strawberries, sliced
Drain pineapple well and mix w/ pie filling. Add condensed milk and stir. Fold in Cool Whip until well combined. Will be a tad runny. Chill overnight to set. Garnish w/ sliced berries.
