Italian White Bean Soup
4-5 garlic cloves minced
2 TBS olive oil
1 lb. mild sausage
1 medium onion finely chopped
1-2 tsp Italian seasoning
1 15.5 oz white beans- rinsed and drained
2 boxes (32 oz each) chicken broth
9 oz. spinach chopped, if needed
Salt and pepper
In stock pot, heat oil on medium. Add sausage and brown w/ salt and pepper 3-4 minutes until brown. Drain fat, if necessary. Add garlic and onions. Saute 4-5 minutes until soft. Add beans, seasoning and broth (I usually use 1 1/2 boxes). Bring to a boil. Reduce heat. Simmer 5 minutes. Add spinach. Cook 5 minutes until wilted.

I LOVE this soup. We make it almost every week in the winter - I even entertain with it! Serves up really well with mozzarella and pepperoni grilled sandwiches. -Erin
