Side Dish Dilema

Do you find yourself longing for new side dishes? Are they what you can never find enough recipes for? If you answered yes to both of those questions, let me say "Join the club." I am constantly trying to serve up new sides to go along with my constantly revolving menu of "mains". For me finding the main portion of a meal, which for us is usually a meat, or something made out of meat, is usually not the hard part. That honor is given to what I'm going to make alongside it. Yes, like every family we have our favorites and staples, but we need variety to keep meals fresh and new. So when I was discussing this ongoing battle with a friend, she offered to share a recipe she had just been given from a friend too. (Talk about the domino effect) She said she hadn't a chance to make it, but liked the way it sounded. Well, the first ingredient on the list was egg noodles and I was pretty much sold. I love them and I think they make a great side dish with just a little butter and herbs, but can take on great flavor and still be simple enough for a busy day, as is the case with my Creamy Italian Noodles. Plus this time broccoli was added, so now we're talking another chance to use fresh summer veggies! Side dishes can truly make or break a meal, and if you are looking for some to definitely make it, try this tonight!

Egg Noodles with Broccoli
1 lb. egg noodles
2 c. fresh broccoli florets
1 (10 3/4 oz) can cream of chicken soup
1 (10 3/4 oz) can cream of broccoli soup
1/2 c. sour cream
1/3 c. Parmesan cheese
Salt and Pepper to taste

In a large pot, cook egg noodles according to directions. During the last 5 minutes, add broccoli and continue to boil. Drain and set aside. In the same pot, over low heat,  combine soups, sour cream and Parmesan. Stir until well combined and heated through. Add noodles and broccoli to mixture. Season with salt and pepper. Stir well. Garnish with extra Parmesan if desired.

I have never though of using soups like this! I bet it tastes amazing.

Oh, my girls would love this. Sometimes I think they'd rather have broccoli than candy! :) Thanks again for linking up!
